MAPLE, HAM, & PINEAPPLE KABOBS
These quick and easy Maple, Ham and Pineapple Kabobs are packed with flavor and oh so easy! The perfect way to use up leftover ham!

Steps:
- GRILLED KABOBS:
- If using bamboo skewers, soak for 15 - 30 minutes prior to filling with meat and fruit.
- Prepare grill per grill specifications
- Using a Kabob skewer, skewer pineapple and ham, alternating between the two.
- Grill kabobs for 10 - 20 minutes on indirect flame flipping half way through allowing ham and pineapple to caramelize. You may need to do this in batches.
- While kabobs cook, base with pure maple syrup, once per side.
- When heated through, serve immediately over rice.

- In a small bowl, combine vinegar and brown sugar. Pour half of the marinade into a large resealable plastic bag; add ham and sausage. Seal bag and turn to coat; refrigerate for at least 2 hours. Refrigerate remaining marinade for basting., Place sweet potatoes and water in a microwave-safe dish. Cover and microwave on high for 4 minutes or until tender., Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread the ham, sausage, sweet potatoes, green peppers, onion, tomatoes and pineapple. , Grill, covered, over medium heat or broil 4-6 in. from the heat for 8-10 minutes or until sweet potatoes are tender, turning and basting occasionally with reserved marinade.

- Drain the pineapple, reserving 2 tablespoons juice; set pineapple aside (discard remaining juice or save for another use). In a saucepan, combine the juice, butter, brown sugar and cinnamon; cook and stir over medium heat until sugar is dissolved. Set aside.
- Place sweet potatoes in another saucepan and cover with water; bring to a boil. Reduce heat. Simmer, uncovered, for 10-12 minutes or until potatoes are tender; drain.

- To assemble the skewers, cut the ham, onion, pepper, mushrooms and fresh pineapple into 1” cubes and thread onto metal or wood skewer sticks, alternating ingredients.
- To make the grilling sauce, combine the pineapple juice, ketchup, soy sauce, garlic cloves and brown sugar in small sauce pan. Bring to a boil, then reduce heat to low and simmer for at least 10 minutes. Allow to cool before use.
- Cover skewers with grilling sauce. This can be done ahead of time and then stored in the refrigerator, if needed.
- To cook skewers, heat grill to medium-high and sear each side for about 5 minutes until all ingredients have been heated through and have nice sear marks.
