HONEY CRISP APPLE PIE

These apples were a gift from my neighbor. Since I already had 2 pounds of sliced apples in the fridge, I decided to use these in a pie. I had never used Honey Crisp in a pie , so this was a bit of an experiment that went very well. My husband loved this pie. He had sort of hinted that he would like one so I surprised him with...

Steps:

  • 1. Preheat oven to 425 degrees F. Wash peel core and slice apples into thin slices. This is basice Apple Pie recipe. I did a bit of research to learn about these delicious tasting apples, and found they are considered an all purpose apple, so they worked great in my pie, and are great in cakes as well.
  • 2. Add apples to a large bowl. Then combine sugar and spices with flour in a separate bowl and stir to blend together.
  • 3. Pour sugar mixture over apples, and stir to blend in then sprinkle with the lemon juice and stir till thoroughly mixed together.
  • 4. Unroll pie crust and position into a 9 inch glass pie plate. Press down to conform to pie dish.
  • 5. Fill pie crust with sliced apple mixture. Then top with second crust. Tuck the edge of top crust to the bottom edge of the base crust then crump together.
  • 6. Now brush top of crust with evaporated milk or an egg wash. Make 5 or 6 slits in top of crust so steam can escape during cooking. Then sprinkle top with decorators sugar.
  • 7. Place pie plate on a shallow baking sheet to catch any potential drips during baking. Then place in preheated 425 degree oven and bake for 20 minutes. After 20 minutes, you may want to cover the edge of pie with aluminum foil to prevent over browning of the edges. Then continue baking for an additional 30 minutes, or until top crust is golden brown.
  • 8. Remove pie from oven and allow pie to cool for at least a few hours before cutting. Serve plain as is or with your favorite ice cream.

Steps:

  • Draw desired shape of cookie on a Styrofoam plate, then cut out shape with X-Acto knife and discard shape. If desired, cut out additional shapes from same plate. Trim plate, leaving a 1-inch border around stencil(s). Make more stencils with more plates if desired.
  • Put oven rack in middle position and preheat oven to 350°F. Line a large baking sheet with nonstick liner.
  • Beat together butter, confectioners sugar, honey, and tea leaves in a large bowl with an electric mixer at medium speed until combined well. Add egg whites 1 at a time, beating well after each addition. Reduce speed to low, then mix in flour until just combined.
  • Place stencil on liner and spread batter with spatula over stencil to completely cover opening. Carefully lift stencil from liner and stencil more cookies in same manner about 1 inch apart. Bake until edges are deep golden brown, 6 to 9 minutes. Cool cookies 1 minute on sheet, then transfer with spatula to a rack to cool completely. (To curl cookies, drape while hot over handles of wooden spoons or rolling pins to cool.) Stencil and bake more cookies with remaining batter.

1 stick (1/2 cup) unsalted butter, softened
1 cup confectioners sugar
1/4 cup mild honey
2 1/4 teaspoons decaffeinated Earl Grey tea leaves (from 2 to 3 tea bags)
2 large egg whites
1 cup all-purpose flour
Special Equipment
disposable Styrofoam plates; a small sharp knife such as an X-Acto; a 17- by 11-inch nonstick bakeware liner such as Silpat; a small offset spatula

Steps:

  • Preheat the oven to 350 degrees. Line baking sheets with Silpats or parchment paper, and set aside.

  • Remove pan from heat, and stir in remaining ingredients. Cool to room temperature.
  • Using a 1/2-ounce ice-cream scoop, drop batter onto prepared baking sheets about 4 inches apart. Bake until cookies are crisp and golden, 10 to 12 minutes. Slow-Baked Honeycrisp Apples image

Steps:

  • For apples:
  • Position rack in center of oven and preheat to 300°F. Butter four 3/4-cup custard cups or ramekins. Line rimmed baking sheet with parchment paper.
  • Mix sugar, ginger, and coriander in small bowl. Peel apples, halve through stem end, and remove core. Slice apple halves crosswise into 1/8-inch-thick slices. Place thin layer of apple slices in each prepared custard cup, overlapping slices; brush lightly with melted butter. Sprinkle about 1/2 teaspoon sugar mixture over each, then sprinkle very lightly with orange peel. Repeat layering apple slices, brushing with melted butter and sprinkling with sugar mixture and orange peel until all apples, butter, sugar mixture, and peel are used (there will be about 8 or more layers of apples in each custard cup and cups will be very full). Cover tops of cups with plastic wrap, then foil. Using small sharp knife, pierce 4 holes through foil and plastic wrap of each to allow steam to escape. Place cups with apple mixture on prepared baking sheet. Place 1 empty custard cup or ramekin atop each to weigh down.
  • Bake apple mixture until very soft and reduced in volume by about half (some of melted butter may spill out onto baking sheet), about 2 hours. Remove empty custard cups. Transfer cups with apple mixture to rack and cool at least 20 minutes. DO AHEAD: Can be made 1 day ahead. Cover with foil and refrigerate. Rewarm, uncovered, in 300°F oven until just warm, about 15 minutes.
  • For topping:
  • Whisk all ingredients in medium bowl until soft peaks form. Spoon cream atop apple mixture in each cup.

Apples:
1/3 cup sugar
1/8 teaspoon ground ginger
Pinch of ground coriander
4 medium Honeycrisp or Fuji apples (about 1 1/4 pounds total)
1/4 cup (1/2 stick) unsalted butter, melted
1 tablespoon finely grated orange peel
Topping:
1/3 cup chilled heavy whipping cream
1 tablespoon powdered sugar
1/4 teaspoon vanilla extract
Pinch of ground ginger
Special Equipment
8 3/4-cup custard cups or ramekins
