Sesame Brittle image

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Combine sugar, honey, and water in a small, thick bottomed saucepan over medium heat. Cook and stir until a smooth slurry forms, about 3 minutes. Stir in raw sesame seeds.
  • Cook over medium-low heat, stirring often, until mixture turns an amber-caramel color, 5 to 10 minutes. A candy thermometer should read 300 degrees F (150 degrees C). Remove saucepan from heat. Stir in butter and vanilla extract. Pour mixture onto prepared baking sheet.
  • Cool until hardened, 15 to 20 minutes. Break into pieces.

They would always get those Sesame Crunch sticks for little snacks at home and I just loved them as much as they did. Well, I want to learn to make my own and here is the recipe. Honey Sesame Brittle (or crunch) image

Steps:

  • 1. First, line a cookie sheet with parchment paper or tin foil sprayed with oil. Or just the pan itself sprayed with oil. Now, place all ingredients into a large heavy based saucepan.
  • 2. Begin stirring (with wooden or metal spoon) ingredients over medium heat until it comes to a boil. Remain boiling, and with a candy thermometer measure temp. till it gets to 325 degrees. (Needs to get to this temp in order to become brittle.) Immediately remove from heat and spread on pan.
  • 3. Spread mixture onto the pan with a spatula.
  • 4. Score into to pieces a few minutes after placing on cookie pan or wait and just break up into pieces when cooled. That takes about 20 minutes or so. I put the one's I bought at the health food store in this pic so you could see them too.
  • 5. You can serve in a bowl just to munch on or place it on another dessert for a crunch garnish, such as a pie or ice cream. Here is a top view of the thickness of this brittle.

3/4 c toasted black sesame seeds
3/4 c white sesame seeds (you can toast this if you want in a pan constantly stirring for 7 to 8 minutes)
1/3 c sugar
1 c honey
1/2 tsp vanilla extract or cinammon

Crunchy Sesame Seed Candy image

Steps:

  • Coat a 9-inch-square baking pan or dish with oil or non-stick cooking spray; set aside.
  • Put the sesame seeds into an ungreased 10-inch skillet (preferably one with a non-stick surface) and stir them over medium-high heat for about 5 to 10 minutes, or until they are lightly browned and aromatic.
  • Temporarily transfer the seeds (they will be hot) to a bowl, making sure that none are left in the skillet; set aside.
  • Put the honey, brown sugar, cinnamon, and ginger into the skillet and mix them well.
  • Slowly bring the mixture to a boil over medium heat, stirring constantly.
  • As soon as the entire mixture comes to a full rolling boil, cook it vigorously for exactly 2 minutes.
  • Remove the skillet from the heat and immediately stir in the sesame seeds until well mixed.
  • Quickly turn out the hot mixture into the prepared pan and use a metal spatula that has been dipped into cold water to press the candy into a very smooth and even layer.
  • Cool the candy in the pan for l5 minutes, or until it is solid but still lukewarm.
  • Run the spatula around the edge of the candy to loosen it.
  • Then turn out the whole slab of candy onto a wooden board or other cutting surface.
  • Use a sharp knife to cut the large square of warm candy into very small squares, diamonds, or rectangles.
  • Cool the candies completely; then store them in an airtight container at room temperature.
  • If a professional look is desired, roll each cooked candy in a small piece of stiff cellophane and twist the ends.

Sesame-Nut Crunch With Yogurt image

Steps:

  • Place yogurt in a sieve lined with cheesecloth, and set over a medium bowl; wrap ends of cheesecloth over yogurt, place a weight such as a few soup cans on top, and drain in refrigerator 15 minutes.
  • Combine sesame and pumpkin seeds with nuts; set aside. Oil a 9-by-13-inch pan; set aside. Pour 1/2 cup honey into a saucepan; sprinkle with sugar. Cook over medium-high heat, stirring, until sugar dissolves and temperature reads 320 degrees on candy thermometer, about 12 minutes.
  • Add reserved nut mixture to syrup; quickly stir to combine. Pour mixture into prepared pan, and spread out with well-oiled offset spatula. Set pan on a wire rack to cool completely and harden.
  • Pour remaining 1/2 cup honey into a saucepan; add star anise, cloves, and cinnamon. Place over low heat until warm, 5 to 6 minutes.
  • Spoon yogurt among four serving dishes, drizzle with warm honey, and serve with the sesame crunch broken into pieces.

  • To prepare this Greek honey sesame bars (Pasteli) recipe start by toasting the sesame seeds. Place a frying pan over high heat and add the sesame seeds. Toast them for 2-3 minutes until golden (not too brown). Remove the sesame seeds from the pan and set aside. Continue with the rest of the recipe quickly, so that the sesame seeds remain hot. Alternatively you can spread the sesame seeds in a pan and toast them in the oven at 180-190C (375F).
  • In the same pan add the honey and bring to a boil, until it starts to foam. Add a pinch of salt and the toasted sesame seeds. Lower the heat to medium and stir constantly with a wooden spoon for about 3-5 minutes, until nicely coloured. Be careful not to burn the mixture.
  • Line a round pan (22cm/ 8.5 inch. diameter) with parchment paper and pour in the mixture. Be careful not to touch it, as it is very hot. Spread the mixture very well using a spoon.
