TRAIL BARS
I have used raisins in place of dates, and used chopped walnuts and pecans instead of almonds; up to you. The perfect snack and energy booster for a day in the great outdoors, or any occasion. Warning: Addictive!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together the butter, 3/4 cup honey, and lemon juice until well blended. Combine the flour, oats, and wheat germ; mix into the honey mixture. Spread evenly into the bottom of an ungreased 9x13 inch baking pan. Set aside.
- In another bowl, beat eggs while gradually pouring in 1/4 cup honey. Stir in almonds, chocolate chips, dates, apricots, coconut, and sesame seeds until they are evenly distributed and well coated. Spread over the crust in the pan.
- Bake for 30 to 35 minutes in the preheated oven, or until center is set, and the top is lightly browned. Cool completely before cutting into bars.

Steps:
- Melt peanut butter and honey together in the microwave, stirring every 15 seconds.
- Add oats, almonds, peanuts, and raisins into the bowl and mix until well coated. Let the mixture cool to room temperature.
- Add chocolate candies and mix just until combined.
- Line a baking dish with parchment paper and pour the cooled mixture into the pan. Press into the edges of the pan.
- Cool in the refrigerator for at least 2 hours. Cut and serve.
- Enjoy!

HONEY TRAIL MIX BARS
These yummy granola bars are packed with healthy goodies and are peanut free! If you decide to half the recipe, add slightly more honey. They are great with or without the chocolate chips and dried blueberries are a great substitute. These are my favourite bars ever!

Steps:
- Preheat oven to 325 F degrees.
- Lightly grease a 9 x 15" pan.
- Combine the first four ingredients in a large mixing bowl. Add vanilla, honey, and brown sugar. Beat with an electric mixer. Batter will be very heavy.
- Using a strong spoon, stir in remaining ingredients until well combined.
- Press dough into prepared pan.
- Bake 20-25 minutes until golden brown. Cool in pan 10 minutes. Cut into bars and cool completely before removing from pan.

TRAIL MIX WITH HONEY-OATMEAL CLUSTERS

- Preheat the oven to 300 degrees F. Mist a baking sheet with cooking spray. Toss the oats with 2 tablespoons water, the vegetable oil, wheat germ and honey. Form small clusters of the mixture on the baking sheet and bake until crisp, about 15 minutes.
- Add the mixed dried fruit to the baking sheet, sprinkle with the cinnamon and bake 3 to 5 more minutes. Let cool, then toss with the nuts, sunflower seeds, raisins, coconut and M&M's. Store in an airtight container.

These no-bake bars make a yummy snack that the entire family will love! If desired, you can substitute other nut butter for the peanut butter and other nuts and seeds for the sunflower seeds.

Steps:
- Spray a 9x13-inch baking dish with cooking spray.
- Mix crispy rice cereal, oat cereal rings, sunflower seeds, raisins, and chocolate chips together in a large bowl.
- Stir honey and brown sugar in a saucepan, place over high heat, and bring to a boil. Stir and boil for 1 minute. Remove from heat and stir in peanut butter and vanilla extract until smooth and well blended.
- Pour the hot peanut butter mixture into the dry ingredients and stir until all dry ingredients are moistened.
- Press the mixture into the prepared baking dish to make an even layer.
- Let cool and cut into bars.

- Line an 8x8 baking pan with aluminum foil or parchment paper, leaving a few inches of overhang on two of the sides like handles. Generously coat the foil or paper with baking spray. Set aside.
- In a microwave-safe bowl or a small saucepan over medium heat, combine the honey, peanut butter, and coconut oil. Melt gently and stir until smooth and combined. Remove from the heat and stir in the vanilla extract. Let cool for 5 minutes.
- In a large mixing bowl, combine the oats, cereal, flaxseed, cinnamon, and salt, then stir in the dried fruit, nuts/seeds, and chocolate chips. Pour the peanut butter mixture over the top, then stir until the ingredients are evenly moistened.
- Scoop the mixture into the prepared baking pan, then with a spatula or your fingers, press into an even layer. If the mixture is too sticky, lay a sheet of plastic wrap over the top, then press on its surface. Place the bars in the refrigerator to set, at least 2 hours or overnight.
