HEALTHY OATMEAL COOKIES WITH HONEY
These oatmeal cookies with honey have no raisins!

Steps:
- Whisk oats, flour, baking powder, cinnamon, and kosher salt together in a large bowl.
- Combine honey, applesauce, butter, egg, and vanilla extract in a medium bowl. Whisk until blended. Pour into the bowl with the flour mixture; stir until just combined. Fold chocolate chips and walnuts into the batter.
- Place batter in the refrigerator and let chill at least 30 minutes or up to 3 days.
- When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and place a rack in the center. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet.
- Remove chilled dough from the refrigerator. Let sit for 5 to 10 minutes if very stiff.
- Drop dough onto the prepared baking sheet in 1 1/2-inch balls using a cookie scoop or spoon, leaving 1 inch of space around each. Gently flatten each cookie with your fingers to 3/4-inch thick.
- Bake in the preheated oven until golden, firm around the edges, and set on top, 9 to 10 minutes.
- Place the baking sheet on a wire rack. Let cool on the baking sheet for 2 minutes before transferring cookies to the wire rack to cool completely.

- Preheat oven to 320 degrees F. Lightly spray cookie sheet with non-stick cooking spray or use a baking liner. Set sheet aside.
- In a large bowl, mix together flour, salt, cinnamon, baking powder, and baking soda. Add in butter, oil, eggs, honey, molasses, vanilla, and milk and stir until all combined.
- Fold in oats and raisins.
- Drop heaping tablespoonfuls (these cookies work best if they are a little bit bigger . . . I found that if they are smaller, they burn easily) onto prepared baking sheet.
- Bake for 8-10 minutes or until cookies are slightly golden. Keep in mind that honey bakes faster than sugar, which is why you cook these at a lower temperature that most cookies. Be sure to not overcook them or they will be crispy (unless you like cookies that way!).

WHOLE WHEAT, HONEY SWEETENED OATMEAL CHOCOLATE CHIP COOKIES
I found the recipe for these babies on a food blog I frequent. The poster mentioned that it had been particularly cold out and these cookies served a purpose in making her feel cozy by first baking them, then eating them. Works for me! I bake these on a Silpat cookie sheet. I can't emphasize enough how wonderful these things are, the cookies just come right off, no sticking. If you don't have a Silpat, you can use parchment paper with almost the same results. I like to use the Silpat because the whole carbon footprint issue. Parchment paper may be recyclable, but Silpat is forever (unless your daughter steals it from you, which happened to me).

- Cream the butter and honey together in the bowl of a stand mixer (it can also be done with a hand mixer or a wooden spoon if you're feeling ambitious and particularly strong).
- Add the egg (if you're doing this with a wooden spoon, it's best to beatthe egg prior to adding), vanilla and milk and stir until it's all combined and creamy.
- In a small bowl, whisk all the dry ingredients together and then add them to the wet batter. Stir to incorporate.
- Add oats, orange zest and chocolate chips. Mix.
- On a Silpat or parchment paper lined cookie sheet (seriously, invest in one of these options) spoon out the cookie batter. I use about a tablespoon per cookie.
- Bake at 350 degrees for 10 to 12 minutes, until the cookies are nicely browned.

- Prepare 2 baking sheets by lining with parchment paper or silpat. In a large mixing bowl, cream together butter and sugars. Add spices, salt, and baking soda, mix to combine. Add vanilla and mix until smooth. Beat in the egg, then add honey and mix well. Add the flour, then the oats. Stir to combine. Fold in cranberries and nuts. Cover the mixing bowl with plastic wrap and place in the refrigerator for at least 2 hours or until dough is completely chilled (this allows the oatmeal to absorb the honey which gives these cookies a moist and tender texture). When you are ready to bake the cookies, heat the oven to 375° F. Using a tablespoon or a cookie dough scoop, drop the chilled dough on to the prepared baking sheets leaving at least 2″ between them. Bake the cookies for 10 minutes or until the tops just barely begin to turn brown. If you are baking 2 pans at the same time, rotate the pans from top to bottom shelf halfway through the baking time. Remove cookies from the oven and transfer to a wire rack to cool. Store in an air tight container.

- Preheat oven to 335 degrees. It is better to use a slightly cooler oven for honey cookies. If you only use brown sugar, use 350 degrees.
- Cream butter and sugar and then add other wet ingredients.
- Mix dry ingredients (not add ins) and add to the wet with a hand mixer.
- Add the add ins and mix with a spatula.
- Drop large spoonsful on a parchment lined baking sheet.
- Bake for about 10-12 minutes.
