this is as close as i can find for this soup if any one else knowa about this please write one person did already which is why this is 3 because not as he remembered sigh good crockpot dish can add more meat if you have bucks lol

Hong Kong Borscht image

Steps:

  • brown ox tail in oil.
  • add tomato paste.
  • add spices.
  • add onion.
  • add celery.
  • add carrots.
  • add garlic.
  • add water.
  • add bouillon cubes
  • simmer for 2 hours.( i put in crock pot because it was starting to burn on stove top and worked great ).
  • if using crock pot add everything here
  • add rest of ingredients.
  • simmer for 1 hours.

1 lb oxtail
1 onion, cut into strips
1 tomatoes, cut into chunks
2 potatoes, peeled and cubed
1 carrot, peeled and cubed
2 celery ribs, chopped
4 cups cabbage, shredded
2 garlic cloves, diced
1 bay leaf
salt and pepper
2 beef bouillon cubes
1 teaspoon paprika
1/4 cup tomato paste
1/4 cup ketchup
1/4 cup oil
8 cups water

  • Bring a large pot of water to a boil over high heat. Add the beef bones and meat. Bring back to a boil. Drain and rinse the bones and meat under tap water for a couple minutes. Set aside to drain and cool.
  • In another large pot or Dutch oven over medium heat, add 1 tablespoon vegetable oil. Add onion and saute for 5 minutes. Add carrot and celery and cook for another 3 minutes. Add tomatoes and cook for 4 minutes. Stir in tomato paste and mix well. Add the bones, meat, 12½ cups water, chopped cabbage, bay leafs and black peppercorns (if using). Bring to a boil over high heat. Reduce to medium-low heat and cook for 1½ hours, stirring occasionally.
  • Remove the beef chunk meat and cut into bite size pieces. Put back to soup. Add potatoes if using and continue to cook for another 1½ hours. Season with salt, sugar, lemon juice, Worcestershire sauce, and black pepper. Taste and adjust with seasoning to your own taste. Remove bay leafs and peppercorns. Transfer to serving bowls. Serve immediately with dinner rolls (or Hawaiian rolls).

  • Wash the tomatoes and remove the stems. Slice a cross on top and soak in boiled water for 3 minutes. Place them in cold water and peel off the skin. Slice lengthwise into small wedges.
  • Wash carrot, celery, cabbage and red pepper. Then dice into small pieces of similar size. Sprinkle some salt to drain the additional water.
  • Wash and peel the potato. Then cut them into 2" cubes. Soak in water to prevent them from turning brown.

  • Soak the oxtail in cold water for 1 hour, changing the water a few times. Transfer the oxtail to a large pot of water, bring to a boil, and lower the heat to simmer for 15 minutes. Drain and rinse under cold water to remove foam and scum. Set aside. Tip: Soaking and blanching the oxtail before cooking will remove any blood and impurities.
  • In a large heavy-bottom pot (you will need a 6.75 to 8 QT pot), heat 1 Tbsp oil over medium-high heat and sear the surface of the stew beef. Once seared, transfer to a plate and set aside. Tip: This step will enhance the savory flavor.
  • In the same pot, heat 1 ½ Tbsp oil on medium heat and sauté onion and celery until they are tender.
  • You can keep the leftovers in an airtight container or in the pot and store in the refrigerator for up to 3 days or in the freezer for a month. Remove the potatoes as they change the texture when frozen.
