HOT BUTTERED RUM
This warm and toasty cocktail might stir up memories of cozy winter nights gone by-when the smell of fresh-baked gingerbread filled the air and the twinkling tree lit up the room. And really, it's no wonder why, hot buttered rum is practically Christmas in a cup! With the combination of butter, brown sugar, whipping cream, powdered sugar, cinnamon and cloves-it's as decadent as any holiday dessert. But much simpler, even if it does call for making a batter, which incidentally is the key to this rich and creamy recipe. With a well-seasoned batter mixed up, all that's left is pouring it into your prettiest serving glasses or mugs and mixing in a bit of boiling water. For an impressive finish, top each glass with a grate of fresh nutmeg. Oh, did we mention, this recipe yields 24 serving and can be prepped ahead? That makes it the perfect party drink, don't you think?

- Beat butter and brown sugar in medium bowl with electric mixer on medium speed about 5 minutes or until light and fluffy. Beat in whipping cream and powdered sugar alternately on low speed until smooth. Stir in cloves, cinnamon and nutmeg.
- Use immediately, or spoon into 1-quart freezer container. Cover, label and freeze up to 3 months.
- For each serving, place rum and 2 tablespoons Hot Buttered Rum Batter in mug. Stir in boiling water. Sprinkle with nutmeg.

This is such an old recipe that has been in my family for so long that I cannot remember its history. So many of our family recipes come from my grandparents who, during World War II, had to cook and bake without certain ingredients that were often rationed during wartime. It seems to me that this might be one of those recipes. The mix produces a very rich and tasty batter that you can keep in your refrigerator and take out on those cold winter evenings when you want a creamy Hot Buttered Rum drink to take away the chill after spending a cold day playing or working in the snow. - Place the ice cream, sugar, and butter in a large saucepan and cook over on low heat, stirring frequently, until the butter is melted and mixture is creamy and well blended.
- Remove pan from heat; add cinnamon and nutmeg, and stir well. Let mixture cool.
- Place the cooled batter in an airtight container and store in the refrigerator until ready to serve (or it can be kept in the freezer for up to 1 month).

- Melt butter in a microwave safe bowl, and add the spices and mix well.

- 2. Add butter and blend well.
- 3. Add nutmeg, cinnamon, cloves and salt and blend well.
- 4. Place in an air tight container and keep in refrigerator or freezer.
- 5. HOW TO MAKE A HOT BUTTERED RUM: Preheat mug with boiling water. Drain and add 1 heaping teaspoon of Rum Batter (will melt a bit). I usually use more batter. It's a preference thing! Add 1.5 oz. Rum Fill mug with HOT water. Traditionally one would hit the drink with a hot poker (they use a large metal swizzle stick heated up. It makes for a nice show at a bar...and a nice sizzle.) Garnish with an 8" stick of cinnamon. Optional but will add much more cinnamon flavor? Enjoy but please drink responsibly by never drinking and driving!!
