Steps:
- Preheat oven to 350°. In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened and bubbly, 2 minutes. , In a greased 2-1/2-qt. baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion. Repeat layers. Top with remaining potatoes. Pour white sauce over all., Bake, covered, for 1 hour. Uncover; sprinkle with cheese. Bake until potatoes are tender, 10-15 minutes longer.

Had a friend when I lived in Southern Illinois that liked to make this casserole for the motorcycle club's picnic's. Very tasty.

Steps:
- 1. Grease 1 1/2 quart casserole.
- 2. Add hotdogs, beans and bacon. Mix and set aside.
- 3. Combine bacon drippings, onions and pepper in a heavy skillet and cook over medium heat five minutes or till lightly browned.
- 4. Add remaining ingredients. Mix until well blended.
- 5. Pour over hot dog mixture and mix well.
- 6. Cover and bake for 1 hour in 350 oven.
SLOW-COOKER CHILI CHEESE DOG CASSEROLE

- Spray 6-quart oval slow cooker with cooking spray. Cut hot dogs in half lengthwise, then into 1-inch pieces; set aside. Shred enough of the cheese to get 1/2 cup; cover and refrigerate for later. Cut remaining cheese into 1-inch cubes.
- In 12-inch nonstick skillet, cook beef, onion and garlic over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is no longer pink; drain.
- Stir in hot dogs, tomato sauce, Worcestershire sauce, 3 teaspoons of the chili powder and the pepper. Heat to simmering; reduce heat to medium, and cook 2 to 3 minutes, stirring frequently, until bubbling and slightly thickened. Remove from heat; transfer mixture to slow cooker. Stir in cheese cubes until well mixed. Cover to keep warm.
- Separate dough into 8 biscuits. Cut each biscuit into 6 pieces, and transfer to large, resealable food-storage plastic bag. In small bowl, mix melted butter, onion powder and remaining 1 teaspoon chili powder. Pour butter mixture on top of biscuit pieces; seal bag, and shake to evenly coat. Place biscuits in single layer on top of beef mixture in slow cooker.
- Cover top of insert with large kitchen towel. Place lid on top of towel. (This will prevent condensation from dripping onto biscuits during cooking.) Cook on Low heat setting 2 1/2 to 3 hours or until biscuits are done. Insert knife into center of casserole to test if biscuits are fully baked; outer edge of casserole will be deep golden brown.
- Sprinkle with reserved shredded Cheddar cheese. Return lid to slow cooker; cook 3 to 5 minutes or until cheese melts. Serve warm.

EASY HOT DOG CASSEROLE - TASTY!
This casserole came in handy many times when my daughter was small and I worked long hours. Quick to throw together, it is hearty and really quite good! Though not at all 'fancy', all ages seem to enjoy it, and it can easily be customized to your taste. You can add one or two cans of chili, depending on how 'soupy' you like...

- 1. Pre-heat oven to 350 degrees.
- 2. Cut weiners into 3 to 4 pieces each, and lay in single layer on bottom of casserole dish. Top evenly with chili; sprinkle with half of the green onions. Add tator tots; sprinkle with remaining green onion. Sprinkle cheese over all.
- 3. Cover; bake at 350 degrees until weiners are plump, about 20 to 30 minutes. Uncover last five minutes to melt cheese.
- 4. *Sometimes for a little bit of crunch I will crumble up some corn chips (Fritos) and add them on top of the chili bean layer.

This recipe is one from my childhood 30 years ago, and haven't run across another one like it. Definitely a tasty, unique flavor unlike any other.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
- Melt butter in a large skillet over medium heat; cook and stir onions until translucent, 8 to 10 minutes. Transfer onions to a large bowl and mix cooked rotini, tomato soup, hot dogs, corn with its juice, dill pickle relish, and yellow mustard into onions. Pour mixture into a baking dish.

HOT DOG CASSEROLE
The original version of this recipe came from "The Northern Exposure Cookbook" by Ellis Weiner. This is a real family-style kid-pleasing recipes that I often bring to potlucks and family gatherings. It is like a pot of macaroni & cheese but with the added surpise of the hotdog slices. It is easy prepare, is inexpensive, and doubles nicely. I have even prepared the ingredients the night before and baked it the next day with success (just allow the ingredients to come to room temperature before baking or add a little extra cooking time). You may use reduced fat ingredients if you have health concerns, but it will not be quite as rich. That being said, I do just about always use "light" hotdogs with no real sacrifice to taste. Prep time includes cooking the pasta.

- Preheat oven to 350 F degrees.
- Grease a 2-quart casserole.
- Add the freshly cooked and drained macaroni into the casserole along with the sliced hot dogs and just 2 cups of the cheese; mix well.
- Combine butter and onion in a medium saucepan and saute over medium heat until the onion is wilted (about 5 minutes).
- Whisk flour into the butter mixture quickly until flour is absorbed, then remove from heat.
- Add milk slowly, whisking to combine well- make sure you whisk very quickly and thoroughly or you will have doughy clumps.
- Return to heat, whisk in the salt and pepper, and bring to a boil (still whisking)- just be careful not to let it burn.
- As soon as it starts to hit the boiling point, remove from heat and pour evenly over the macaroni mixture.
- Stir to gently to combine.
- Sprinkle with remaining 1/4 cup cheese and bake, uncovered, for 18-20 minutes or until heated through and the cheese has melted and browned (If you prepare this in advance, wait to add the remaining cheese until you are ready to bake the casserole the next day).
- For variety, I have tried other types of cheeses and thought Cheddar blended with Monterey Jack was also very nice in this.
- NOTE: This does not freeze well.

- Heat oven to 350°F. In 2-quart saucepan, heat water, butter and salt to boiling. Remove from heat. Stir in milk and dry potatoes just until moistened. - Add onions and sauté for about 1 minute on medium heat.
- Add chopped hot dogs and sauté for 1 minute.

- Add cheddar cheese and cover and let cheese melt.
