- Heat a large skillet over low heat. Spread butter or margarine onto one side of two slices of bread. Place both pieces buttered side down in the skillet. Lay a slice of cheese on each one, and top with slices of tomato, onion and jalapeno. Butter one side of the remaining slices of bread, and place on top buttered side up. When the bottom of the sandwiches are toasted, flip and fry until brown on the other side.

This is out of a cookbook called "Patio Daddy-O" 50' recipes with a 90's twist...making a grilled cheese sandwich with a hot iron and aluminum foil may seem odd at first. But after you taste them, you'll agree that the weight and even heat of the iron produce the toastiest, crispiest cheese sandwiches on the planet...you can use the healthy sprouted breads and fancy cheeses...but to really get the awesome flavor you need to use the old-fashioned American cheese ( the ones wrapped in plastic) nested between slices of white bread...Open the foil occasionally while grilling to make sure the sandwich doesn't overcook; when finished, the bread should be thin, almost flat, and beautifully bronzed, oozing cheese. Cooking time does not include heating the iron...

- Heat an electric iron to medium heat. (not on steam).
- Butter one side of each bread slice.
- With the buttered side on the outside, make a sandwich with the cheese, leaving a 1/4-inch border of bread.
- Wrap the sandwich completely in one layer of aluminum foil.
- Place on a counter or cutting board and weight with a hot iron.
- Leave the iron on each side until the sandwich is very flat and toasted, about 4 minute per side. (Lift the foil periodically to make sure the iron is not too hot.).
- Unwrap and serve.
- Variation:.
- Replace the American cheese with thinly slice Fontina cheese. Add a layer of prosciutto ham. Proceed as directed.

- Preheat the iron by plugging it in and turning it up to its highest heat setting. While waiting for the iron to heat, butter both sides of your bread. The butter on the outside of the sandwich will prevent the bread from sticking to the aluminium foil when you press it with the iron. The butter on the inside is optional. I like to butter the inside because it makes the sandwich taste richer.
- Place the sliced cheese on one of the slices of bread. If you have a microwave handy, zap the bread with the cheese for 30 seconds to melt the cheese. This gives your sandwich a head start so your iron can do less work. If you don't have a microwave handy, you can skip this step.
- Assemble the sandwich by bringing the two slices of bread together to close the sandwich. Lay the sandwich on one side of the aluminium foil and fold over the other side. Don't wrap the foil around the sandwich like a parcel because the heat from the iron won't be able to reach the sandwich if you have too many layers of foil in the way.

- Spread Dijon mustard lightly across one side of one slice of bread. You’re aiming for a very thin layer. Stir the green onion into the grated cheese, and set aside.
- Melt a pat of butter (about 1 teaspoon) in a medium non-stick skillet over medium heat (or a large skillet, if you’re planning on making two sandwiches at once). Once melted, place the mustardy slice of bread into the skillet, with the mustard side facing up.
- Top the slice with the oniony cheese (aim for about a 3/4-inch layer of cheese). Then place the remaining slice of bread on top. Cover the skillet with a lid, and cook for several minutes, or until the underside of the bread is golden.
- Remove the sandwich from the skillet with a spatula, and add another pat of butter to the skillet. Once melted, carefully flip the other side of the sandwich against the buttered pan. Cover and cook until the underside of the bread is nice and golden, and the cheese is all melted. If the bread is browning before the cheese has melted, dial down the heat as necessary.
