  • Quarter cabbage and chop laterally into about 2 inch pieces. Place cabbage in an extra large bowl or pot. Combine salt with 2 cups of lukewarm water, stir to dissolve salt. Pour salt water over the cabbage and add remaining 4 cups, stir to mix. If you can, place a plate or circular baking dish of sorts on top to submerge the cabbage (I used a pie dish), place something with a good amount of weight on top to hold down if necessary (it’s not completely necessary but will help to evenly wilt the cabbage). Give cabbage a good mix every now and then. Let soak for 2 hours, up to 12 if you like. I found that 2 – 4 hours was enough and didn’t see much change between the two times.
  • While cabbage is soaking, combine apple, onion, ginger and garlic in food processor/blender and process until fairly smooth.
  • In a small bowl, mix the chili pepper with a small amount of water to make a wet paste. You can just as easily blend it with the apple/onion mixture adding a couple tablespoons of water as well.
  • Once cabbage is ready, drain water, reserving 1/2 cup, and rinse well. Place cabbage back in large bowl, combine with the scallions, apple/onion mixture and chili paste. Mix well to coat all pieces. Either use your hands (with gloves on pref to protect from the chili pepper) or simply use wooden spoons to toss everything.

  • Cut the stem end of cabbage lengthwise in half only about 3 - 4 inches in. Then, slowly pull apart to separate into two pieces by hand. Do the same for each half to make quarters. Running the knife through all the way would unnecessarily cut off the cabbage leaves.
  • In a large bowl, dissolve 1/2 cup of salt in 5 cups of water. Thoroughly bathe each cabbage quarter in the saltwater one at a time.
  • Using the other half cup of salt and starting from the outermost leaf, generously sprinkle salt over the thick white part of each leaf. Try to salt all the cabbage quarters with the 1/2 cup salt, but you can use a little more if needed. Repeat with the rest of the cabbage quarters. Set aside for about 6 - 8 hours, rotating the bottom ones to the top half way through.
  • Meanwhile, make the glutinous rice paste and the broth and cool. Prepare the other seasoning ingredients. Mix all the seasoning ingredients. Set aside while preparing the other ingredients until the red pepper flakes become pasty.

  • Slice cabbage into half. Then slice each half into quarters. Chop into 1 inch pieces in width. Add chopped into a large bowl and then massage in the coarse sea salt. As you do this, you'll notice the cabbage beginning to wilt and releasing some water. Cover the bowl and let it sit for 1-2 hours. The cabbage is ready when you're able to bend a piece without it snapping in half.
  • In the meantime, prepare the seasoning paste. Add the water and flour into a sauce pan over medium heat and whisk together until combined for around 10 minutes until it begins to get thick. Remove from heat and let it cool.
  • Once the cabbage is ready, rinse the cabbage throughly and drain well (I like to let it sit in the colander over a bowl for half an hour).
