Steps:
- In a large skillet over medium-high heat, melt butter. Add mushrooms and onion; saute until tender. Sprinkle with flour; stir until blended. Gradually add milk. Stir in the bouillon, Italian seasoning and pepper., Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in sour cream and sherry. Remove 1 cup sauce; set aside. Stir chicken and 1 tablespoon parsley into remaining mixture; heat through., Spread 3 tablespoons filling down the center of each crepe; roll up. Drizzle reserved sauce over the top. Sprinkle with remaining parsley. Serve with additional sour cream if desired.

HUBBY'S FAVORITE CHICKEN SCALOPPINE WITH ANGEL HAIR PASTA
My mom made this for my husband and he begs for it to this day! Not one of my personal favorites, but I'm not a big chicken fan. My kids love this dish as much as he does though, so I have to make it pretty frequently around here!

Steps:
- Trim chicken of all fat.
- Pound the chicken as thin as you prefer- the thinner, the better.
- Put a pot of water on to boil for the angel hair.
- Coat chicken in seasoned flour and shake off excess.
- Melt about half a stick of butter in a non-stick frying pan.
- Add chicken and cook until lightly browned on both sides and cooked all the way through.
- Cook pasta 2-3 minutes or according to package directions.
- Remove chicken from pan and place on serving plates.
- Melt the other half of the stick of butter in same pan with lemon juice to taste.
- Add drained pasta to pan and toss to coat.
- Place pasta on plates with chicken and pour any excess butter/lemon juice mixture over chicken and pasta.
- My hubby makes his OWN separate butter/lemon juice mixture for just his plate!
HUBBY'S CHICKEN
This is my husband's favorite chicken. It's probably his favorite comfort food, served with mashed potatoes.

Steps:
- Wrap each chicken breast in a slice of bacon.
- Line a baking dish with the jar of dried beef and place the breasts on top.
- Mix together the sour cream and soup and"seal" the top of the chicken with it.
- Cover in foil and bake on 275 for 3 hours.
- Do not uncover during baking.

- Preheat oven to 425°F. Toss green beans with 1 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on a rimmed baking sheet. Roast, tossing once halfway through, until crisp-tender and blackened in spots, 12-15 minutes.
- Whisk cornstarch, 1 1/2 tsp. salt, and 1/2 tsp. pepper in a large bowl. Heat 3 Tbsp. oil in a large skillet over high. Add chicken to cornstarch mixture and toss to coat. Cook half of chicken, turning occasionally, until chicken is cooked through and a light brown crust forms, 5-7 minutes.
- Meanwhile, mix honey, soy sauce, garlic, vinegar, Sriracha, tomato paste, ginger, 3 Tbsp. water, and remaining 1/4 tsp. salt and 1/4 tsp. pepper in a medium bowl.
- Transfer chicken to a plate. Heat remaining 3 Tbsp. oil in skillet over high. Cook remaining chicken 5 minutes, then add chiles (you can add a few more depending on your heat preference) and cook, stirring and making sure chiles make contact with bottom of pan, until chicken is cooked through and chiles have toasted and puffed, about 1 minute more. Stir in honey mixture. Return first batch of chicken to skillet, toss to coat, and cook until sauce is reduced and thickened, about 2 minutes.
- Divide chicken and green beans among plates. Top with scallions. Serve with rice alongside.
HUBBY'S BAKED BONELESS CHICKEN WINGS
Delicious, easy and healthy to make! We have this meal at least twice a month! A big hit with company and the kids! We have the kiddos use Ranch and honey mustard as their dip.

- Prepare an oven pan (cookie sheet should work) with non-stick cooking spray.
- Preheat oven to 400 degrees Fahrenheit.
- Set aside 2 medium-sized mixing bowls.
- Prepare 1 large plate or shallow pan with enough bread crumbs to coat the surface. If using plain or homemade breadcrumbs, add salt, pepper, garlic powder, and a couple of shakes of cayenne pepper to taste; keep breadcrumbs off to the side, you may need more.
- Add cut up chicken cubes into one of the medium-size mixing bowls, pour milk over chicken, just enough to cover the chicken; you do not need more than this. Set bowl aside for later.
- Add flour into the other mixing bowl. Dip chicken into flour, coating entirely. You may need to add flour as you go.
- Add eggs to the milk mixing bowl used earlier; if there is some leftover milk just mix with eggs.
- Dip about 5 or 6 cubes of chicken at a time in egg mixture.
- Coat all sides of the chicken in the breadcrumb plate.
- Add to prepared oven pan.
- Once all the chicken is added to pan, spray the top with the cooking oil (we use olive oil spray). Season with more salt and pepper, just enough to taste.
- Put in oven and cook for 20 minutes.
- Turn pieces of chicken over, spray again with cooking spray, season with salt, pepper, and garlic powder to taste.
- Cook for an additional 15 minutes.
- Drizzle the wing sauces of your liking over chicken! Enjoy!
