HUNGARIAN NOODLE SIDE DISH

I first served this creamy, rich casserole at our ladies meeting at church. Everyone liked it and many of the ladies wanted the recipe. The original recipe was from a friend, but I changed it a bit to suit our tastes. -Betty Sugg, Akron, New York

Steps:

  • In a large bowl, dissolve bouillon in water. Add the next 6 ingredients; mix well. Stir in cottage cheese, sour cream and noodles and mix well. , Pour into a greased 2-1/2-qt. baking dish. Sprinkle with the Parmesan cheese and paprika. Cover and bake at 350° for 45 minutes or until heated through.

3 chicken bouillon cubes
1/4 cup boiling water
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup chopped onion
2 tablespoons Worcestershire sauce
2 tablespoons poppy seeds
1/8 to 1/4 teaspoon garlic powder
1/8 to 1/4 teaspoon hot pepper sauce
2 cups 4% cottage cheese
2 cups sour cream
1 package (16 ounces) medium noodles, cooked and drained
1/4 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 375 degrees. Lightly oil a 7 X 11 inch baking pan or spray with a nonstick cooking spray.
  • Cook noodles according to package directions. Drain.
  • While noodles are cooking, heat oil in a large nonstick skillet over medium heat. Add onion, bell pepper, and garlic. Cook, stirring frequently, until onion begins to brown, about 10 minutes. Remove from heat.
  • In a large bowl, combine cottage cheese, yogurt, paprika, salt, pepper and onion powder. Mix well. Add onion mixture and cooked noodles. Mix until well combined. Spoon mixture into prepared casserole. Press noodles down gently with the back of a spoon.
  • Sprinkle with paprika.
  • Cover and bake 25 minutes. Uncover and bake 5 minutes more.

Easy and Cheesy Hungarian Noodle Bake image

Steps:

  • Set oven to 350 degrees.
  • Grease an 11 x 7-inch casserole dish (or you can use a large dish).
  • Cook noodles in a large pot of boiling salted water; drain and transfer to a large bowl then toss with 2 tablespoons butter.
  • Cook onions and garlic in butter until tender.
  • Combine cooked noodles, onion/garlic mixture, cottage cheese, sour cream, worcestershire sauce, hot pepper sauce, salt, pepper, poppy seeds and dill.
  • Transfer into prepared baking dish.
  • Sprinkle with paprika then Parmesan cheese.
  • Bake for 25 minutes, or until done.

4 ounces fine egg noodles

Hungarian Cabbage With Noodles image

Steps:

  • Saute bacon until crisp in large frying pan. Remove bacon; set aside. Stir sugar and salt into bacon drippings. Add cabbage, stirring until cabbage is coated with bacon drippings. Cover and cook 7 to 10 minutes. Add cooked noodles and bacon, stirring to blend. Adjust seasoning to taste. , Spoon into 2-quart baking casserole; cover tightly and bake at 325° for 45 minutes. Spread sour cream over top of casserole; sprinkle with paprika and return to oven for 5 minutes more.

  • Heat water in a large pot and cook the pasta according to directions. See recipe note #1 regarding different pasta choices. The pasta should cook while you prepare the other ingredients in next step. But watch the timing on the pasta if using gluten-free noodles as they'll be done before you're ready to add them into the cabbage mixture. NOTE: Save about one cup of your pasta water when you drain the noodles!
  • In a large skillet, heat one tablespoon olive oil over medium high heat. Add sliced mushrooms and saute' until golden, about 5 minutes. If needed, add 1/2 tablespoon butter to help with browning. Add onions and cook, stirring occasionally, until onions are soft, about 3 minutes. Add chopped garlic and cook until fragrant, 30 seconds.
  • Start with half of the cabbage and stir into the mushroom, onion mixture. Add one tablespoon of the butter and cook until the cabbage begins to brown. See recipe note #2 if wanting to add less oil. Add remaining cabbage and additional tablespoon butter. Add the granulated garlic and onion at this time and continue to cook, stirring until the cabbage has softened and browned around the edges.
  • Once the noodles are al dente and drained (remember to save some of that pasta water), add the noodles a little at a time until you are happy with the ratio of noodles to cabbage. Add 1 teaspoon salt and 1/4 teaspoon black pepper, less if desired, taste and add more if needed. Add the peas and stir to combine. If you want the dish to be a little "creamy", add some of the pasta water, about 1/4 cup at a time until desired wetness is achieved.
