BIGOS (HUNTER'S STEW)

A traditional Polish stew using pork, kielbasa, and sauerkraut. Great for a cold winters day. Well worth the time it takes to make it!

Bigos (Hunter's Stew) image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large pot over medium heat. Add the bacon and kielbasa; cook and stir until the bacon has rendered its fat and sausage is lightly browned. Use a slotted spoon to remove the meat and transfer to a large casserole or Dutch oven.
  • Coat the cubes of pork lightly with flour and fry them in the bacon drippings over medium-high heat until golden brown. Use a slotted spoon to transfer the pork to the casserole. Add the garlic, onion, carrots, fresh mushrooms, cabbage and sauerkraut. Reduce heat to medium; cook and stir until the carrots are soft, about 10 minutes. Do not let the vegetables brown.
  • Deglaze the pan by pouring in the red wine and stirring to loosen all of the bits of food and flour that are stuck to the bottom. Season with the bay leaf, basil, marjoram, paprika, salt, pepper, caraway seeds and cayenne pepper; cook for 1 minute.
  • Mix in the dried mushrooms, hot pepper sauce, Worcestershire sauce, beef stock, tomato paste and tomatoes. Heat through just until boiling. Pour the vegetables and all of the liquid into the casserole dish with the meat. Cover with a lid.
  • Bake in the preheated oven for 2 1/2 to 3 hours, until meat is very tender.

2 thick slices hickory-smoked bacon
1 pound kielbasa sausage, sliced into 1/2 inch pieces
1 pound cubed pork stew meat
¼ cup all-purpose flour
3 cloves garlic, chopped
1 onion, diced
2 carrots, diced
1 ½ cups sliced fresh mushrooms
4 cups shredded green cabbage
1 (16 ounce) jar sauerkraut, rinsed and well drained
¼ cup dry red wine
1 bay leaf
1 teaspoon dried basil
1 teaspoon dried marjoram
1 tablespoon sweet paprika
¼ teaspoon salt
⅛ teaspoon ground black pepper
⅛ teaspoon caraway seed, crushed
1 pinch cayenne pepper
½ ounce dried mushrooms
1 dash bottled hot pepper sauce
1 dash Worcestershire sauce
5 cups beef stock
2 tablespoons canned tomato paste
1 cup canned diced tomatoes

HUNTER'S SAUCE WITH MUSHROOMS

This sauce is also known as sauce chasseur. It's a nice brown sauce with mushrooms. I sometimes substitute this sauce when the recipe calls for golden mushroom soup.

Hunter's Sauce with Mushrooms image

Steps:

  • Saute onions in butter until very tender.
  • Add mushrooms and saute additional 2- 3 minutes.
  • Add wine, simmer, and reduce by half.
  • Add tomato puree and gravy and simmer for 5 minutes.
  • Adjust seasoning to your taste with Maggi, salt and pepper.
  • You can also add your favorite herbs to this sauce.

2 tablespoons minced onions
2 tablespoons butter
1 cup chopped mushroom
1/2 cup white wine
1/2 cup tomato puree
1 cup left over home made beef gravy (or brown gravy/brown sauce made from a packet such as Knorr's)
2 -5 drops maggi seasoning (or other flavor enhancer like Kitchen Bouquet, or even Worcestershire sauce)
salt and pepper

  • Place beef on vegetables.

  • In a Dutch oven, brown meat in oil over medium heat. Add 4 cups water and scrape to loosen any browned drippings from pan. Add the tomato juice, onions, celery, Worcestershire sauce, bay leaves, salt and pepper. Bring to a boil. Reduce heat; cover and cook for 2 hours, stirring occasionally. , Discard bay leaves; add the carrots, rutabaga and potatoes. Steps:

  • Saute bacon in 1 tablespoons olive oil until golden brown.
  • remove bacon to a bowl and saute onion in drippings until soft.
  • remove to bowl with bacon.
  • saute mushrooms in remaining 2 tablespoons olive oil.
  • return bacon and onions to skillet.
  • add tomato paste, thyme, salt, pepper, and paprika.
  • stir until tomato paste is dissolved.
  • add wine and reduce over medium heat for 5 minutes.
  • add beef broth and reduce over medium heat for 10 minutes.
  • stir in creme fraiche and parsley until heated through.
  • spoon over sauteed chicken breasts or veal/pork scallopine.

HUNTER'S BEEF

This is a great recipe for a small dinner party. The pan sauce is delicious over garlic cheese mashed potatoes or recipe #247050. This is probably my husband's favorite dish, at least it is the one he requests the most. As written the sauce can be spicy (depending on the freshness and type of cayenne you have), so if you are not a fan of spicy food I would 1/2 the cayenne.

Steps:

  • Trim fat from meat.
  • Cut into 4-6 serving size pieces.
  • Pound with meat hammer until 1/4-1/2" thin and tenderized.
  • Combine flour, salt, and black pepper.
  • Rub mixture onto the steaks to thoroughly coat.
  • Heat oil in large flat bottom skillet that has a lid.
  • Add the meat and brown on both sides.
  • Scatter the celery, mushrooms, and 3/4 of the scallions over the top.
  • In a small bowl, combine the red wine, soy sauce, ginger, cinnamon, and cayenne.
  • Pour over the meat & vegetables.
  • Bring to a simmer.
  • Simmer covered for 1 hour. (can be simmered an additional 30-45 minutes without adverse effects).
  • Serve with pan sauce and vegetables poured over and sprinkled with remaining scallions.
