CINNAMON RAISIN BREAD PUDDING

Steps:
- Preheat oven to 350 degrees F.
- Tear 6 pieces of the bread into large bite size pieces. In a large bowl, combine the cream, sugar, and eggs. Reserve 1/4 of the mix for later use. Soak the bread in the custard for at least 30 minutes. Transfer it to a small baking dish and top with the remaining 1/4 of the custard mixture. Sprinkle the raisins over top and cover with aluminum foil. Cook for 35 minutes covered, and then for 10 minutes uncovered. Remove from the oven and hold for 15 minutes. Cut the pudding into 2 squares, and transfer it to a plate. Sprinkle with powdered sugar and serve with a scoop of ice cream.

- 1. Preheat the oven to 350 degrees. 2. Spray a standard size loaf pan with cooking spray, set aside. 3. Add the Ice Cream to a large mixing bowl. Ice Cream should be soft and creamy, but not runny. If it isn't soft enough, set the mixing bowl on top of the warm stove for a few minutes. 4. Next slowly add the Self Rising Flour and 1/2 Tablespoon of Cinnamon to the Ice Cream and stir well with a wooden spoon. 5. Next fold in the Raisins. Don't over stir at this step or your Bread will not rise as much. Even though it is a more dense Bread, you don't want to over work the dough. 6. Spoon the Dough into the prepared pan then spread it out evenly. Sprinkle the top with 1 Teaspoon Cinnamon and the Sugar then Pop it in the preheated oven and set the timer for 30 minutes. All ovens cook differently so it may take an additional 15 minutes for the Bread to be done. Insert a toothpick in the center of the loaf, if it comes out clean, your bread is done. 7. Remove the Bread from the oven and let it cool for about 10 minutes in the pan, then transfer the loaf to a cooling rack. 8. Once the Bread has cooled, slice and serve! - In a saucepan over medium-low heat, stir together the sugar and half-and-half. When the mixture begins to simmer, remove from heat, and whisk half of the mixture into the eggs. Whisk quickly so that the eggs do not scramble. Pour the egg mixture back into the saucepan, and stir in the heavy cream. Continue cooking over medium-low heat, stirring constantly, until the mixture is thick enough to coat the back of a metal spoon. Remove from heat, and whisk in vanilla and cinnamon. Set aside to cool.
- Pour cooled mixture into an ice cream maker, and freeze according to the manufacturer's instructions.

- Preheat oven to 350°. In a large bowl, combine flour, 1-1/2 cups sugar, soda and salt. In a small bowl, whisk eggs, buttermilk and oil. Stir into dry ingredients just until moistened. - Combine all bread dough ingredients except for the raisins in a large mixing bowl or bread machine bucket and mix to combine. Knead until smooth and elastic, at least fifteen minutes by hand or ten in a stand mixer. Add the raisins once the dough is kneaded and knead just until they are evenly distributed.
- Place the dough in a clean, lightly oiled bowl covered with a damp tea towel. Allow to rise 60-90 minutes in a warm place such as a warm but turned-off oven, until the dough has doubled in bulk.
- Shape the dough into a sandwich loaf by stretching out to a 9 x 14 inch rectangle. Tuck in the corners and the top and then roll into a log. Pinch the sides and the bottom closed. Place into a lightly greased loaf pan with the seam side down. Cover with heavily greased plastic wrap and place back into a warm place to rise again until the dough is 1-2 inches above the top of the loaf pan.
- Bake at 350 degrees for 40 minutes, until the loaf is baked through and golden brown. Remove loaf and turn out onto cooling rack. Allow to cool fully before frosting.
