PORK CHOP CASSEROLE
I cut this out of a cooking magazine, probably Taste Of Home and changed it to suit or our tastes. It sounds like a very flavorful way to have pork chops and to keep them moist. I haven't made them yet but plan to make them and serve them over mashed potatoes, yummy!!!!! Note: This recipe also works great in a crock pot. My friend and I have decided that it is easier to just mix all the sour cream with the soup and broth in the beginning.

Steps:
- In a shallow bowl, combine the flour, salt and pepper; dredge pork chops.
- Heat oil in a large skillet; cook pork chops for 4 to 5 minutes per side or until browned.
- Place pork chops in a single layer in an ungreased 13x9x2 inch baking dish.
- Combine cream of mushroom soup, chicken broth and 1/2 cup sour cream; pour over chops.
- Sprinkle with half of the French fried onions.
- Cover and bake at 350 degrees Fahrenheit for 45 to 50 minutes.
- Stir remaining sour cream into the sauce.
- Top chops with remaining onions.
- Return to oven, uncovered, for 10 minutes.
SOUTHERN PORK CHOP CASSEROLE
This recipe was given to me by my sis in law. I have made it many times and every time done something different and this is my version of the recipe.

Steps:
- Season pork chops with salt and pepper and sear in a pan until brown but NOT done.
- Grease a 9x13 dish; pour in rice to cover the bottom.
- Mix soups and water in a sauce pan over medium heat until well dissolved.
- Place pork chops on top of rice then pour soup mix over pork chops.
- Bake in a 350 degree oven covered for 45minutes to 1 hour.

- Pour tater tots into a 9x13-inch casserole dish.
- Top with one can of mushroom soup.
- Place sliced mushrooms over that.
- Sear pork chops, then place over mushrooms.
- Top with remaining can of soup.
- Cover with foil.
- Bake at 450°F for about an hour, until chops are cooked through.

A great recipe with your "starch" already prepared along with your meat. Once it's in the oven you just forget about it until dinner time. Also a great make ahead dish!!! Easily doubled or tripled.

Steps:
- Brown chops in fat in skillet.
- While browning put rice in bottom of greased casserole and slice vegetables.
- Lay chops on rice and top each with one slice tomato and one slice pepper.
- Season as you go.
- Pour consomme in, add majoram and thyme.
- Cover and bake in pre-heated 350 degree oven for one hour.

- Preheat the oven to 350°F.
- Place the flour in a shallow dish; add the pork chops and turn to coat completely with the flour.
- Heat the oil in a large skillet over medium heat. Brown the pork chops in batches for 5 to 6 minutes per side.
- Meanwhile, combine the remaining ingredients in a 9" x 13" baking dish; mix well. Place the browned pork chops over the rice mixture. Cover the casserole dish with aluminum foil and bake for 1 hour, or until no pink remains in the pork.
