Steps:
- Place 4 ounces shredded cheese directly on a hot flat top grill or frying pan. Place bread on top and let cheese melt and get crispy. Add remaining ounce cheese to the tops of the bread and let melt.
- Remove from grill. Spread guac on one half of the melty side of the sandwich and place beans on the other. Drizzle sriracha evenly over the guac. Mash the sandwich together so that the crispy cheese is on the outside. Slice and enjoy!
INSIDE OUT BACON GRILLED CHEESE

- Put the bacon in a large nonstick skillet over medium heat and cook, stirring, until golden brown and crispy, about 10 minutes. Transfer to a paper towel-lined plate to drain. Reserve the bacon fat.
- Add the bacon fat to a griddle over medium heat. Place the bread on the griddle and lightly toast one side. Remove from the griddle and arrange toasted-side down on a work surface. Divide 2 cups of the cheese and all of the bacon, tomatoes and chives over 4 slices of bread. Top with the other 4 slices of bread, toasted-side up, to make 4 sandwiches.
- Divide 1/2 cup of the remaining cheese into 4 piles on the griddle and place a sandwich over each pile, pressing down. Griddle for a few minutes until the cheese is browning and melted. Divide the remaining 1/2 cup of cheese into 4 piles on the griddle?one next to each sandwich. Then flip each sandwich onto a pile of cheese and cook for a couple of minutes until the center of each is melted.

- Mix the shredded cheeses together in a small bowl.
- Melt butter in the bottom of a fry pan over medium heat. Add one slice of bread. Top the piece of bread with about 1/2 of the cheese mixture and the ham slices. Top with the second piece of bread.
- Place 1/2 of the remaining cheese on top of the second slice of bread and carefully turn the sandwich over to grill the cheese. Cook about 3 to 4 minutes, or until the cheese on the bottom is slightly crispy. While it is cooking, add the remaining cheese on what is now the top piece of bread.
- Flip the sandwich and cook another 3 to 4 minutes to crisp the cheese on the second side. Remove to a plate, slice in half, and enjoy!

- Melt 1 1/2 tablespoons butter in a nonstick skillet over medium-low heat. Place bread slices in the skillet on top of the melted butter.
- Spread about 1/4 cup Cheddar cheese on one slice of bread; place the other slice of bread, butter-side up, on top of the cheese. Spread about 2 tablespoons of cheese on top of the sandwich.
- Melt remaining 1/2 tablespoon butter in the skillet next to the sandwich. Flip the sandwich onto the melted butter so that the cheese-side is facing down. Spread remaining cheese on top of the sandwich. Cook sandwich until cheese on the bottom is crispy and caramelized, 3 to 4 minutes. - PREHEAT oven to 350°F.
- Combine morsels in small bowl, set aside. Combine flour, baking soda and salt in another small bowl. Beat butter, peanut butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in 1 cup morsel mixture. Drop dough by rounded tablespoon onto ungreased baking sheets. Press down slightly.
- Bake for 10 to 13 minutes or until golden brown. Cool on baking sheets on wire racks for 2 minutes; remove to wire racks to cool completely.
- Spread Peanut Butter Frosting and Filling on bottom side of one cookie. Place bottom side of a second cookie over frosting creating a cookie sandwich; press down slightly. Frost top of cookie sandwich and sprinkle with a few morsels. Repeat with remaining cookies and frosting.
- PEANUT BUTTER FROSTING AND FILLING:.
- Combine 1 1/4 cups prepared vanilla frosting and 1/4 cup creamy or chunky peanut butter in small bowl.

- Preheat Oven 375 degrees.
- Cook the Bacon. Line a plate with a paper towel. Place bacon on prepared baking sheet, avoiding overlap, and bake 12 minutes, or until crispy. Remove to prepared plate and set aside.
- Cook the Vegetables. Heat 1 teaspoons olive oil in a medium non-stick an over medium heat. Add garlic and spinach to hot pan and cook, while stirring, 30 seconds, or until spinach is wilted. Season with ¼ teaspoons salt and a pinch of pepper.
- Cook the Eggs. Add butter to pan containing vegetables, melt, and add eggs. Use a rubber spatula to constantly scrape along the bottom of the pan until eggs are set and a little set, about 2-3 minutes. Remove from burner and season with a pinch of salt and pepper. Residual heat from pan will carry over and finish cooking eggs. Remove eggs to a plate and wipe pan clean.
- Assemble and Toast Sandwiches. Lay top halves of bagels on a clean surface with seasoned side facing up. Divide eggs, followed by sliced Roma tomato, cheese slices, and two slices of bacon between top halves. Top with remaining bagel halves, cut side facing up. Place pan from cooking eggs over medium heat. Add 1 teaspoons olive oil and place one assembled sandwich in hot pan and cook 2 minutes, or until golden brown. Carefully flip and repeat on second side. Add 1 teaspoons olive oil to pan and repeat process with second sandwich.
