Steps:

  • Blend together butter, cheese, and yolk in food processor until smooth. Add flour, dried mustard, and salt and pulse until just combined. Transfer dough to a sheet of wax paper and divide into 3 portions (do not clean processor).
  • Return 1 portion to processor, add pepper, and pulse until combined well, then transfer to another sheet of wax paper. Shape into a 7-inch-long log (1 1/2 inches thick), using paper as an aid, then roll up log in paper and twist ends of paper to close. Make 2 more logs on separate sheets of wax paper in same manner, using caraway seeds for second log and nigella seeds for third log (instead of pepper) and cleaning processor in between batches. Chill logs until firm, about 2 hours.
  • Put oven rack in middle position and preheat oven to 350°F. Line a large baking sheet with parchment paper.
  • Unwrap 1 log and cut enough thin slices (about 1/8 inch thick) from it to fill baking sheet, arranging slices 1 inch apart. Bake until edges of crackers are golden, 10 to 12 minutes. Transfer on parchment to a rack and cool slightly, about 15 minutes. Make more crackers in batches with remaining dough.
  • Serve crackers warm or at room temperature.

1 stick (1/2 cup) unsalted butter, softened
3/4 lb sharp Cheddar, coarsely grated (preferably in a food processor)
1 large egg yolk
1 cup all-purpose flour
1 teaspoon dried mustard
3/4 teaspoon salt
1 teaspoon cracked black pepper
1 teaspoon caraway seeds
1 teaspoon nigella seeds
Special Equipment
parchment paper

CHEDDAR APPLE CRISP

I never understood the cheese with apple pie thing until I made this recipe. The cheese in the crumble elevates a simple apple dessert to a whole new level, without losing the home/farm comfort. Then I lost my recipe for a couple of decades. Now I just found it again, and I can't wait to make it!

Steps:

  • 1. Slice the apples. A corer-slicer makes this job a snap.
  • 2. Put the apple slices in a large mixing bowl, toss with the lemon juice and water.
  • 3. Arrange the apple slice mixture in a 9x9" baking dish that has been prepared with food release spray.
  • 4. Combine 1/4 cup of the sugar, cinnamon, and salt, and sprinkle over the apples.
  • 5. Combine remaining sugar with the flour and salt. Work in the butter with a fork until the mixture is crumbly.
  • 6. Stir in the cheese.
  • 7. Sprinkle the crumb mixture over the apples.
  • 8. Bake at 350* about 45 minutes, until the apples are tender and the crumble is golden brown.
  • 9. NOTE: You can use whatever apple you like, but I think Granny Smith is the best, or maybe Pippin. This recipe is easy to multiply. It can easily be made gluten free by substituting gluten free flour. I like Bob's Red Mill Gluten Free All Purpose Baking Flour.

5 c sliced apples
3/4 tsp cinnamon
1/2 c sugar, divided
4 Tbsp water
2 tsp lemon juice
2/3 c flour
1/8 tsp salt
1/3 c butter
1 c grated cheddar cheese

  • Preheat oven to 425° F. Spray a baking sheet with cooking oil and then top with parchment paper.
  • Drop the cheddar cheese in mounds of 1 tbsp each, spreading each out into an even layer. Also, leave about 1-inch of space between each cheese round. Sprinkle with a touch of cayenne pepper (not too much!).
  • Bake for 6-10 minutes, watching carefully. You want the cheese to melt and just about stop bubbling. Do NOT let it brown though, as it will be bitter.

  • Cheesy Irish Cheddar Bacon Jalapeño Potato Skins. It’s no secret that potatoes are the go-to vegetable for the Irish due to their endless abundance. But if you think that potatoes can ever be overdone, you’re in for a treat!
  • Slow Cooker Corned Beef and Cabbage Sliders with Guinness Mustard. These sliders are an absolute necessity the next time you’re about to watch the big game!
  • Mini-Shepherd’s Pie. If you’re looking for a home-cooked meal, try out these mini-shepherd’s pies. These bad boys are a perfect appetizer to welcome your guests with or enjoy all by yourself.
  • Reuben Dip. Corned beef is a go-to for Irish dishes due to its soft texture that melts in your mouth. Rather than just another corned beef sandwich, throw in some cheeses and dressings to make a rich Reuben dip!
  • Reuben-Topped Irish Nachos. Another one of my favorite ways to use up some left-over corned beef is by whipping up some Reuben nachos. This recipe is basically an Irish spin on nachos, but instead of chips, you guessed it… potatoes!
