Irish Stew With Guinness, Potatoes and Sausage image

Steps:

  • Quarter the potatoes, and blanch until just tender.
  • Brown sausage and bacon.
  • Sauté garlic, onions, potatoes, and mushrooms in butter.
  • Place the sausages, bacon, and vegetable mixture in large pot.
  • Add the broth and Guinness stout and bring to a simmer.
  • Cover and simmer at least 1 hour.
  • Finish with thyme, salt, pepper, and butter.
  • Serve as a stew with Irish soda bread or other hearty bread.

2 tablespoons fresh thyme
2 tablespoons unsalted butter

Irish Beef Stew With Guinness Stout image

Steps:

  • Heat a 6 quart stove top casserole or oven proof pot and add the oil and the bay leaves.
  • Cook the bay leaves for a moment and then add the meat. Brown the meat on both sides on high heat.
  • Add the onion and cook for a few minutes until it is clear.
  • Reduce the heat to low and add the garlic, thyme, rosemary and flour and stir until smooth.
  • Add the beef stock and stout; simmer, stirring until the stew thickens a bit. Add the remaining ingredients and cover.
  • Place the pot in the oven at 275 F: for about 2 hours, stirring a couple of times.
  • Check for the salt and pepper before serving.

Remove most of the fat, leaving about 2 tablespoons in the pot.
  • Add the sausages in a single layer, being careful not to crowd the pot. Work in batches, if necessary. Cook, turning occasionally, until golden brown all over (sausage won’t be fully cooked at this stage), about 7 minutes. Remove sausages to a plate and set aside. Repeat with remaining sausages, if necessary.
  • Add the onions, along with a pinch of kosher salt (the bacon and sausages are both salty) and black pepper, and cook, stirring occasionally, until onions turn soft and slightly golden, about 7 to 10 minutes. If the bottom of the pot threatens to burn, add a tablespoon or so of water and scrape the bottom of the pot with the spoon.
