- Preheat an oven to 300 degrees F. Using a hand or electric mixer, beat the sugar, corn meal, flour, eggs and salt together. Using a spatula, gently fold in the pecans, pineapple and coconut. Stir in the melted butter and mix well. Bake an unbaked pie shell for approximately 50 to 60 minutes in the oven. Cover the crust edge with strips of aluminum foils to keep the edges from browning too fast. Cook 15 to 30 more minutes, or until the pie is set. Meanwhile, toast the coconut flakes in a pan under low heat until it becomes fragrant. Sprinkled on toasted coconut on top of the pie.

- In a small bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Cover and refrigerate for at least 30 minutes., Divide dough in half. Roll each half into a 6-in. circle. Transfer to two 4-1/2-in. tart pans; fit pastry into pans, trimming if necessary. Arrange pecans in shells., In another small bowl, whisk egg, brown sugar, corn syrup and vanilla. Pour over pecans. Place shells on a baking sheet. Bake at 375° for 35-40 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack. Top with whipped cream if desired.

This pie was always a favorite for birthdays while my children were grouping up. They never liked the typical party cakes. My mother gave me the old-fashioned recipe for lard crust...it turns out every time!

- In a large bowl, beat eggs just until blended but not frothy. Add the sugar, salt and corn syrup. Stir butter and vanilla just until blended. Spread pecans in the bottom of pie shell. Pour in filling. , Place in a 350° oven and immediately reduce heat to 325°. Bake for 50-60 minutes or until a knife inserted in the center comes out clean. If desired, serve with whipped cream. Refrigerate leftovers.
