TURKEY SALTIMBOCCA

Steps:
- Place flour in a large shallow bowl. Cut tenderloin horizontally in half; flatten each half with a meat mallet to 1/2-in. thickness. Sprinkle with pepper. Dip in flour to coat both sides; shake off excess., In a large skillet, heat oil and 1 tablespoon butter over medium heat. Add turkey; cook 3-4 minutes on each side or until no longer pink. Remove from pan; keep warm., In same pan, heat 1-1/2 teaspoons butter over medium-high heat. Add prosciutto and sage; cook and stir until slightly crisp. Add wine to pan; increase heat to medium-high. Cook until liquid is slightly reduced, stirring to loosen browned bits from pan. Remove from heat; stir in remaining 1-1/2 teaspoons butter. Serve with turkey.

A recipe I threw together when nothing else seemed tasty that night. Turned out quite delicious! Serve with a curry yogurt dip...

Steps:
- Slice turkey breast into strips.
- In a medium bowl combine all dry ingredients.
- In a separate bowl beat egg.
- Using one hand for the wet and the other for the dry, dredge the turkey in the egg followed by the flour mixture.
- Repeat until all strips are coated.
- Drizzle about a tablespoon of olive oil in a large skillet over medium heat
- Place turkey strips in skillet, cook for 3-4 minutes.
- Flip strips, cook an additional 3-4 minutes until cooked through, taking care to not overcook or the turkey will become incredibly dry.

- Preheat oven to 425°. In a shallow bowl, whisk egg whites and oil. In another shallow bowl, mix coconut, bread crumbs, sesame seeds and salt. Dip turkey in egg mixture, then in coconut mixture, patting to help coating adhere., Place on baking sheets coated with cooking spray; spritz turkey with cooking spray. Bake 10-12 minutes or until turkey is no longer pink, turning once., Meanwhile, in a small saucepan, mix sauce ingredients. Bring to a boil; cook and stir 1-2 minutes or until thickened. Serve turkey with sauce.

- (large enough pieces so it won't fall through grill rack) put in a container with a tight seal.
- mix soy sauce, oil, diced ginger and minced garlic.
- Pour over turkey, seal container and put in refrigerator for 2-24 hours.
- Turn container several times while marinating Cook on barbque grill or broiler oven until done.
- Serve with salad and fresh fruit.
