CHOCOLATE BANANA MUFFINS

- Preheat oven to 350°. Cream butter and sugars. Beat in eggs, bananas and vanilla. In another bowl, combine flour and baking soda; add to creamed mixture just until combined. Stir in walnuts and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. , Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks.

One of the best banana-chocolate chip muffins I've ever had, made with coconut flour. No butter or oil needed.

- Preheat the oven to 350 degrees F (175 degrees C). Line 10 muffin cups with paper liners.
- Blend bananas, eggs, coconut flour, stevia, baking powder, and salt together in a bowl with a whisk or a fork. Stir in chocolate chips.
- Pour mixture evenly between the prepared muffin cups, filling each about 1/2 inch from the top as these muffins won't rise as much as others.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes. Cool for 5 minutes and transfer to a paper towel-lined plate; the moisture from the bananas will leak through the liners a little and this is normal.

CHOCOLATE BANANA MUFFINS
These muffins are so moist and full of flavor! I have looked at dozens of recipes and most had too much sugar for my liking. There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

- Mix wet ingredients in a separate bowl. Make a well in dry ingredients and add wet ingredients. Stir until just mixed. Add chocolate and carob chips and stir until incorporated. Bake in regular sized muffin tin at 350 degrees for 20 to 25 minutes, until a toothpick tests clean. Makes 1 dozen muffins.

- Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
- In large bowl, mash bananas with fork.
