ITALIAN BROCCOLI
I have been making this dish for years. It is a great way to dress up broccoli, a colorful side dish with any roasted meats. I often steam the broccoli ahead of time, cool it quickly in cold water, drain and then, when ready to serve, warm it in the hot garlic oil.

- Place broccoli in a steamer basket; place in a small saucepan over 1 in. of water. Bring to a boil; cover and steam for 5-7 minutes or until crisp-tender., Meanwhile, in a small skillet, combine the oil, garlic and pepper flakes if desired. Cook over low heat until garlic begins to brown, about 1-2 minutes, stirring occasionally. Using a slotted spoon, remove garlic and discard. Add broccoli and toss to coat. Season with salt. Serve immediately.

- Place the broccoli in a steamer basket.
- Steam over boiling water in a large covered saucepan for 3-5 minutes until bright green and crisp-tender.
- Transfer to large bowl.
- Saute the garlic, red pepper and shallots in a large skillet with the olive oil for 3 minutes.
- Remove from heat.
- Add the broccoli and mix well.
- Add the salt, black pepper, red-pepper flakes and Asiago cheese.
- Toss lightly.

I forgot all about this recipe until I was looking through some of my Mom's old recipes. This was from a 6th grade project (yes it is old!!) where our class studied a different vegetable every week and then made a recipe together using the vegetable. I made it the other night and my husband loved it too, so I thought I would post it.

Steps:
- Cook broccoli according to package directions if frozen, 5-7 minute if fresh.
- Run under cool water to stop cooking process.
- Melt butter in small saucepan.
- Stir in flour.
- Add milk, stirring constantly until smooth.
- Add cheese, stir until melted and thick.
- Mix small amount of cheese sauce with beaten eggs, then combine the rest of the cheese mixture with eggs.
- Combine broccoli, tomato, cheese/egg mixture and oregano.
- Pour into 13 x 9 glass dish that has been sprayed with cooking spray.
- Sprinkle with Parmesan cheese.
- Cook at 350 for 1/2 hour or until bubbly.

- Wash and cut broccoli florets in 1/2 inch pieces.
- Place broccoli and water in a shallow, round microwave-safe dish.

This adaptable make-ahead salad is a great instant lunch or side dish. It starts with raw broccoli florets and stems, thinly sliced into irregular shapes to create many textures. As the broccoli sits with salt and vinegar, it softens and becomes slaw. Its mellow flavor is contrasted by the loud ingredients typically found in an Italian sub or chopped salad, like shallots, pickled peppers, olives and provolone. Feel free to add more protein in the form of cured meats, chickpeas, lentils or mozzarella; vegetables like sweet tomatoes or iceberg lettuce; or basil.

- Rinse the sliced shallot under cold water and transfer to a large bowl.
- Cut the stalks away from the broccoli heads. Using a knife or vegetable peeler, remove the fibrous outer layer of the stalks so its light green insides emerge; compost or discard the outer layer. Thinly slice the stalks crosswise, then thinly slice the heads into bite-size pieces. (A mix of shapes and sizes adds texture to the salad, so chop up the broccoli a few ways; there's no one right way to go about it.) Transfer to the large bowl as you go, then transfer any loose bits from the cutting board to the bowl.
- Season the broccoli generously with salt and pepper, then add the almonds, pickled peppers, olives, oil, vinegar and provolone. Toss vigorously with a spoon until everything is combined and the broccoli is shiny with oil.
- Taste and adjust seasonings with salt, pepper, oil and vinegar as needed. Let sit at least 10 minutes before serving. The salad improves with age as its flavors meld, and it can be refrigerated for up to 4 days. Before serving, bring to room temperature and adjust salt, pepper, oil and vinegar to taste, as flavors change in the fridge.
ITALIAN BROCCOLI & PASTA
This quick, yummy, fairly healthy recipe came from the internet (can't remember the site) and I modified it to our families taste. My Italian hubby grew up on this (although I make it a tad differently). We eat it as a main dish, although you could easily eat it as a side for any kind of meat or fish. Adjust the broth to your preferences, my husband likes it soupy, so this version has a lot of broth.

- In a large skillet heat oil and butter; gently brown the garlic. Add broccoli; stir gently. Add chicken broth, cover, bring to boil, lower heat and simmer until broccoli is al dente.
