ITALIAN COOKING SAUCE MIX

Never buy jar sauce again! This is easy to prepare and freezes well. Keep a pint or two in the freezer and you will be prepared. Use this sauce whenever the recipe calls for spaghetti sauce. Recipe comes from Make a Mix Cookery.

Italian Cooking Sauce Mix image

Steps:

  • Combine all ingredients in large stockpot.
  • Simmer 15 minutes over medium-low heat; cool.
  • Pour into six 1-pint freezer containers, leaving 1/2 inch space at top.
  • Seal and label containers; freeze.
  • Use within 6 months.

2 (14 1/2 ounce) cans diced tomatoes, pureed
4 (8 ounce) cans tomato sauce
2 cups water
2 (6 ounce) cans tomato paste
2 tablespoons instant minced onion
2 tablespoons parsley flakes
3 teaspoons salt
2 tablespoons cornstarch
4 teaspoons green pepper flakes
1 -2 teaspoon instant minced garlic
3 teaspoons sugar
1 1/2 teaspoons italian seasoning

I picked up this recipe when I lived in Italy; everyone loves it. Thought it was time to share! The Merlot and chicken granules are very important ingredients that set this recipes aside from other sauces.

Steps:

  • Heat olive oil in a large saucepan over medium heat. Cook and stir onion and garlic in hot oil until the onion is translucent, 5 to 7 minutes.
  • Sit tomato sauce, diced tomatoes, wine, tomato paste, chicken bouillon granules, basil, Italian seasoning, salt, and pepper with the onion mixture. Bring the mixture to a boil, reduce heat to low, and cook at a simmer, stirring frequently, for 1 hour.

  • In a Dutch oven or soup kettle, cook beef in 2 batches over medium heat until no longer pink; drain and set aside. Cook sausage over medium heat until no longer pink; drain and set aside. Classic Marinara Sauce image

Steps:

  • Pour tomatoes into a large bowl and crush with your hands. Pour 1 cup water into can and slosh it around to get tomato juices. Reserve.
  • In a large skillet (do not use a deep pot) over medium heat, heat the oil. When it is hot, add garlic.
  • As soon as garlic is sizzling (do not let it brown), add the tomatoes, then the reserved tomato water. Add whole chile or red pepper flakes, oregano (if using) and salt. Stir.
  • Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.) Discard basil and chile (if using).
