ITALIAN CHEESE STICKS

Steps:
- Line a baking sheet with parchment.
- Lightly roll out the sheet of pastry into a 10-by-12-inch rectangle, then brush with the melted butter. Sprinkle over the mozzarella, 1/2 cup of the Parmesan, the oregano and basil. Using a rolling pin, press the cheese into the pastry. Cut the 12-inch side of the pastry into 12 strips. Twist each strip about 5 times and transfer to the prepared baking sheet. Place in the freezer for 20 minutes.
- Preheat the oven to 400 degrees F.
- Mix together the egg and 1 teaspoon water in a small bowl. Brush the strips with the egg mixture and sprinkle over the remaining 1/4 cup Parmesan. Bake until golden brown and puffed, 10 to 12 minutes. Let cool before removing from the baking sheet. Serve the cheese sticks with warm marinara alongside.

- Preheat the oven to 450 degrees F (230 degrees C). Line baking pans with parchment paper.
- Dissolve yeast and honey in warm water in the bowl of a stand mixer. Let sit until creamy, about 10 minutes.
- Stir flour, Parmesan cheese, olive oil, 1 teaspoon Italian seasoning, and salt into the yeast mixture. Beat until smooth and the dough pulls away from the sides of the bowl. Let rest, about 5 minutes.
- Turn dough onto a lightly floured surface and pinch off about 3 tablespoons. Roll into a log shape. Place on the prepared baking sheet. Repeat with remaining dough.
- Bake in the preheated oven until just golden brown, 13 to 15 minutes.
- While breadsticks are baking, mix butter, garlic salt, and remaining Italian seasoning together.
- Brush butter mixture onto the breadsticks and continue to bake until golden brown, about 3 minutes more.

- In a large bowl, dissolve yeast in warm water and milk. Add the sugar, butter, salt, baking soda and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Turn onto a lightly floured surface; cover and let rest for 10 minutes. Divide into 32 pieces. Shape each into a 4-1/2-in. rope., Place melted butter in a shallow bowl. Place cheese in a second shallow bowl. Dip ropes in butter, then coat with cheese. Place 3 in. apart on lightly greased baking sheets. Combine Italian seasoning and garlic powder; sprinkle over breadsticks. Steps:
- Combine first 3 ingredients.
- Cut dough into 24 pieces. Roll each piece into a 12-inch rope. Sprinkle evenly with Parmesan mixture.
- Place ropes, 1-inch apart, on lightly greased baking sheets. COver with plastic wrap and let rise at room temp for 20 minutes.
- Bake at 350°F for 15 minutes or until golden. Brush with melted butter, and sprinkle with kosher salt. Cool on wire rack 10 minutes.
