ITALIAN SALAD - VEGAN

This is my favorite salad and dressing. Use as much or as little of the artichokes and black olives as you prefer. I don't use the entire can of either. Marzetti's Sweet Italian dressing is found in the refrigerated case of the produce section.

Italian Salad - Vegan image

Steps:

  • Pour some ice-cold water over the shallots to mellow the flavor. Drain and pat dry.
  • Place all ingredients together in a large bowl and toss gently to combine (this can be done a couple hours ahead of time).
  • Dress with Marzetti's Sweet Italian dressing, to taste, and serve immediately.

6 cups romaine lettuce, chopped
15 ounces small black olives, drained
15 ounces artichokes, drained well and chopped
10 -15 grape tomatoes, halved
1 small shallot, thinly sliced into strips
1/3 cup pine nuts, toasted and cooled
sweet Italian dressing, to taste (Marzetti's Sweet Italian)

  • Add your veggies into the salad and give it a gentle toss. You’ll get a little dressing on them but not too much.
  • This salad is best if eaten immediately. If you’re not going to eat your salad immediately, store the dressing, and wetter veggies separate from the salad. The extra water from the cucumber and tomato could wilt the lettuce. Store cut greens in a reusable container with a paper towel in it to absorb excess moisture.

When done, the chickpeas should be golden and slightly crispy.
  • To make the dressing, add all of the ingredients in a prep bowl and whisk to fully combine. Taste and adjust flavors as needed.
  • Cook the ditalini according to the box directions. Drain and rinse with cool water. Drizzle a little bit of the dressing over the noodles and toss to coat to prevent them from sticking. Set aside until the pasta cools to room temperature.
