- Sprinkle chicken with seasoned salt. In a nonstick skillet, cook chicken in butter over medium heat for 5-6 minutes on each side or until a thermometer reads 170°; drain. Remove and keep warm. , In the same skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Saute onion and mushrooms in drippings. Return chicken to the pan. - Flatten chicken breasts with a mallot.
- Place a slice of ham,beef or proscuitto and cheese on each breast.
- Roll up and fasten with toothpicks.
- Mix mushroom soup,sour cream and curry together.
- Place chicken rolls in baking dish,seam side down.
- Pour sauce over chicken.
- Bake at 350 degrees for 1 hour.

JACK'S BBQ CHICKEN
Steps:
- Combine the chicken and marinade in a large non-reactive pan. Refrigerate for at least 2 hours and up to 6.
- Preheat the oven to 300 degrees F.
- Remove the chicken from the marinade and coat generously with some of the rub. Arrange the chicken, skin side-up, in a baking pan and pour the apple juice in the bottom. Cover the pan with aluminum foil and roast for 1 1/2 to 2 hours.
- Uncover the chicken and continue roasting, basting with the sauce occasionally, until the skin is golden.
- Combine all the ingredients in a saucepan and bring to a boil. Whisk until the sugar and salt dissolve. Let cool.

- Preheat the oven to 350 degrees F (175 degrees C). While the oven is preheating, place the chicken breasts in a shallow baking dish. Cover with hot wing sauce, and allow to marinate at room temperature until the oven is hot.
- Bake the chicken in the sauce for 20 minutes. Open the oven, and place the red and yellow bell pepper strips on top of the chicken. Place slices of cheese over the peppers and chicken. Bake for an additional 15 minutes. The chicken juices should run clear, and the center no longer pink.

- Preheat oven to 350 degrees.
- Place chicken between 2 sheets of waxed paper and, with rolling pin or metal "chicken pounder" flatten each breast piece to uniform thickness.
- Place chicken in prepared 9 x 13 baking dish and bake for about 30 minutes, depending on thickness and your particular oven.
- Turn chicken pieces and divide apple slices evenly on top of each piece.

Steps:
- At least one hour or even a day ahead of time, make the Salsa Topping.
- Mix Salsa ingredients in a small bowl, chill.
- In a 13x9" baking dish, place the chicken, (not touching) and dot with Butter.
- Bake at 350° for 30-45 minutes, or until done.
- While chicken is cooking fry bacon and shred the cheeses.
- When chicken is fully cooked, remove from oven.
- Turn oven up to 425°F (*Unless you prefer the broiler).
- Spread the barbecue sauce on chicken, then the bacon and then add cheeses.
- Place the baking dish, back into the hot oven* or under the broiler for a few minutes until cheese is melted and bubbly, plate and top with the chilled Salsa Topping.
