WHISKEY MARINADE

This marinade is so flavorful there is no need for steak sauce! Use your favorite brand of whiskey. I use Jack Daniels.

  • Stir together the whiskey, soy sauce, Dijon mustard, green onion, brown sugar, salt, Worcestershire sauce, and pepper.

WHISKEY GLAZED FLAT IRON STEAKS AND GRILLED POTATOES

The flat iron steak is the second most tender cut of beef, after the petit filet mignon. It comes from the top blade of the chuck. You may see a flat iron steak incorrectly labeled if it has a thick muscle that runs down the center of the steak. A true flat iron is cut horizontally just above and below that tough muscle (rather than vertically through it) so the muscle can be discarded and all that is left is very flavorful and tender beef. If you don't see these steaks in your grocery store, ask your butcher to cut them for you. In most cases, the butcher would be happy to comply and it is well worth it.

Whiskey Glazed Flat Iron Steaks and Grilled Potatoes image

Steps:

  • Preheat a grill on medium-high heat. Whisk together the whiskey, brown sugar, 1 1/2 teaspoons salt and 1 teaspoon pepper until the sugar and salt are dissolved. Stir in 2 tablespoons of the oil and the garlic. Add the steaks, turn a few times to coat with the marinade and let stand at room temperature for 20 minutes.
  • Meanwhile, quarter each potato lengthwise to form wedges and put in a medium pot. Cover with cold water to cover by 1-inch and add salt until the water tastes like sea water. Bring to a boil over medium-high heat, reduce the heat to medium and simmer until tender (but not falling apart), about 15 minutes. Drain well. Toss with 1 tablespoon olive oil.
  • Remove the steaks from the marinade and pat dry with paper towels. Pour the marinade into a small pot and bring to a boil. Boil for 2 to 3 minutes until slightly reduced, making sure the sugar does not burn, to make a glaze and sauce for the steak.
  • Grill the steaks until an internal temperature on an instant-read thermometer reads about 130 degrees F, 3 to 4 minutes per side, brushing with the boiled marinade several times in the last few minutes of grilling time. (If you are cooking the filet mignon steaks, you will need to increase this time to 8 to 10 minutes per side to account for the thicker cut). Transfer to a large plate to rest for 5 to 10 minutes. While the steaks grill, add the potatoes to the grill and grill until well-marked and crispy, turning to grill all sides, about 5 minutes total. Transfer the potato wedges to a bowl.
  • Toss the grilled potatoes with the remaining 1 tablespoon oil, chives, vinegar and salt and pepper to taste. Remove the garlic cloves from the remaining glaze and serve drizzled over the steaks with the potatoes on the side.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
  • Roast garlic in preheated oven until the cloves are soft, about 1 hour.
  • Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
  • Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
  • Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

  • In a mixing bowl, whisk together the whiskey, soy sauce, olive oil, mustard, brown sugar, garlic and fresh ground pepper until thoroughly combined. Pour the marinade over the steaks, turning the steaks once or twice to coat evenly with the marinade. Cover with plastic wrap and marinade over night, or at least 4 hours, turning it once while in the fridge. Grill on high until seared, then remove from direct heat and cook rare plus.

If you wish to have it more like a teriyaki, then use a bit of brown sugar and substitute the vinegar for pineapple juice, but watch it carefully, or it will burn on the grill.

Steps:

  • Combine in saucepan. Bring to boil, then reduce heat and simmer 10 minutes. When it's cool, put in one of your own double-locked gallon sized zip bags so you can throw it away and NO MESS!
  • Use to marinate shrimp or scallops for 1 hour or beef, chicken, or pork in the refrigerator overnight. Flip the package over a few times during the marinating time.
  • It will do about 2 - 4 medium 1 inch stakes or about 1/2 of a chicken.
  • Be careful with shellfish and only marinade for an hour or less, as the taste will take over!
  • Use to baste the shellfish or meat as it is grilled or broiled.
  • Makes about 2 cups of Marinade.

  • Put the steaks in a small pan so they fill most of the space.
  • Take a fork and stab the steaks on both sides.
  • Pour the Worcestershire and the Jack in the pan.
  • Let sit in the refrigerator for 8 hours.
  • Then cook steaks on the grill.
  • Take left over sauce from pan and put in a pour cup.
  • After you cook the steaks put them each on a plate. Then pour the sauce on top.
