THE BEST PEANUT BRITTLE
This sweet and salty peanut brittle has the perfect crunch and sheen. With a little patience, you'll have a delicious brittle to serve to party guests or as an edible gift around the holidays.

Steps:
- Line a rimmed baking sheet with foil and grease with nonstick cooking spray.
- Stir together the sugar, corn syrup and 1/2 cup water in a medium saucepan fitted with a candy/deep-fry thermometer. Bring the mixture to a boil over medium heat, then continue to boil until it's golden brown and it reaches 340 degrees F, about 15 minutes.
- Working quickly, remove the pan from the heat and stir in the butter and baking soda until smooth (it will foam and bubble up). Stir in the peanuts until evenly distributed amongst the sugar mixture.
- Pour onto the prepared baking sheet and quickly smooth with a rubber spatula into a thin and even layer. Let harden uncovered at room temperature until cooled completely. Break into pieces and store in an airtight container.
SPANISH PEANUT BRITTLE
This peanut brittle is a must at our house during the holidays. Everyone says it is the BEST Peanut brittle that they have ever tasted. My friend Joy says it is better than See's. The recipe comes from my 1953(almost 50 year old) Better Homes and Gardens Cookbook.It takes time, BUT, well worth it.

Steps:
- In a heavy skillet (I think an iron skillet works best).
- Combine sugar,corn syrup, and water; cook slowly, stirring till sugar dissolves, cook to soft ball stage(275).
- Add peanuts and salt;Stir and watch so that peanuts don't scorch or burn.
- (They will pop & crack you want them to brown some for best flavor.) Cook to hard crack stage(300-310).
- Add butter and SODA; stir to blend,(Mixture Will Bubble), Pour onto buttered cookie sheet or cover with release foil for easy cleanup(do not butter);Makes2 1/2 Pounds.

JALAPENO PEANUT BRITTLE
As odd as it may sound, the taste of jalapeno works very well with the sweet taste. We gave this as gifts for the holiday and it was very well received. I've been asked to make it again by several people.

Steps:
- In a glass measuring cup place jalapeno and water and microwave for 5 minutes. Let stand for 15 minutes. Drain and reserve liquid and discard jalapenos.
- In a large non-stick saucepan mix sugar, jalapeno liquid and syrup, making sure to mix well. Stir over medium heat until candy thermometer reaches 240 degrees and add peanuts. Continue stirring until candy reaches 298 degrees and remove from heat and add salt, butter and baking soda, stir well.
- Pour onto a well buttered non-stick baking sheet and let cool completely, break into bite-size pieces.
- NOTE:If you use a non-stick silicone baking sheet liners you do not have to butter it and it improves the quality of the candy.

SWEET PEANUT BRITTLE
To make HOT-sweet brittle, stir in 1 t. hot pepper sauce into candy along with vanilla. All this is done in the microwave. Wonderful, wonderful!!

Steps:
- Spray a large baking sheet or a 10x15 inch baking pan with cooking spray.
- Set aside.
- Mix sugar and corn syrup in large microwaveable bowl until moistened.
- Microwave on high 5 minutes (caution, candy mixture gets very HOT).
- Stir in butter and peanuts.
- Microwave an additional 3-4 minutes or until pale golden brown.
- Add baking soda and vanilla (mixture will foam).
- Immediately spread mixture as thinly as possible onto prepared baking sheet.
- Cool completely.
- Break into pieces.
- Microwave chocolate in 1 cup glass measuring cup on high 1-2 minutes.
- Stir until chocolate is completely melted.
- Stir in peanut butter until melted.
- dip half of peanut brittle pieces halfway into chocolate mixture, scraping back brittle against edge of cup to remove excess chocolate.
- Place on sheet of parchment paper.
- Refrigerate until chocolate is set, about 20 minutes.
CHOCOLATE PEANUT BRITTLE
This is a traditional peanut brittle recipe only with cocoa mixed in it for a rich chocolate taste 8)

- Lightly butter cookie sheet and set aside for now.
- In small bowl, stir the cocoa and baking soda, then the butter; set aside.
- In heavy 2 quart saucepan, combine sugar, corn syrup and whipping cream, stirring to combine.
- Cook over medium heat. Keep stirring until sugar is dissolved.
- Stir in the peanuts and continue cooking, stirring frequently, until mixture reaches 300° or when syrup dropped into very cold water separates to threads that are hard and brittle (of course, make sure the bulb on the candy thermometer is not resting on bottom of the pan when used).
- Remove from heat and stir in cocoa mixture.
- Immediately pour onto the buttered cookie sheet.
- With tongs or wooden spoons, quickly spread and pull into a 1/4-inch thickness.
- Put cookie sheet on a wire rack to cool completely.
- When the brittle is cool, break into pieces.
MOM'S EASY PEANUT BRITTLE
My mom got this recipe years ago from someone she worked with...she made it at Christmas and holidays quite a bit. I have never made it, but I know it tastes yummy!! If you like alot of peanuts to candy ratio, use the whole 1 1/2 cups peanuts (or more if you like)...it's purely personal preference!

- The 1 tsp of baking soda should be heaping.
- Combine sugar, syrup and peanuts. Microwave on high 4 minutes, then stir. Cook 4 minutes then stir. Add vanilla and butter or margarine.
- Stir. Cook 2 minutes on high and stir. Add baking soda then stir vigorously. Pour immediantaly onto buttered pan and let cool. Break into bite size peices. Then enjoy!
