BROILED CARIBBEAN SEA BASS
Sea Bass is one of my favorite fish so I like to make this quite often. The hot pepper sauces gives it a little kick This cooks quickly and only really needs 30 minutes to marinade. The cooking time includes the 30 minutes marinating time.

Steps:
- Place fish in a shallow dish.
- Combine cilantro, oil lime juice, pepper sauce and garlic in a small bowl and pour over fish. Cover, marinade in refrigerator 30 minutes or up to 2 hours.
- Prepare black bean and rice mix according to package directions,
- Keep warm.
- Preheat broiler.
- Remove fish from marinade.
- Place fish on rack of broiler pan, drizzle with any remaining marinade in dish.
- Broil 4 - 5 inches from heat 8 to 10 minutes until fish is opaque.
- Serve with black beans and rice and lime wedges.

HONEY & ORANGE ROAST SEA BASS WITH LENTILS

- Heat oven to 200C/180C fan/gas 6. Place each sea bass fillet, skin-side down, on individual squares of foil. Mix together the orange zest, honey, mustard, 1 tbsp olive oil and some seasoning, and drizzle it over the fillets. Pull the sides of the foil up and twist the edges together to make individual parcels. Place the parcels on a baking tray and bake in the oven for 10 mins until the fish is just cooked and flakes easily when pressed with a knife.
- Warm the lentils following pack instructions, then mix with the orange juice, remaining oil, the watercress, herbs and seasoning. Divide the lentils between 2 plates and top each with a sea bass fillet. Drizzle over any roasting juices that are caught in the foil and serve immediately.

JAMAICAN ORANGE SEA BASS

Steps:
- Finely crush the allspice berries with a mortar and pestle, or grind them in a spice grinder.
- In a small bowl, combine the allspice with the chiles, garlic, onions, orange juice, orange zest, oil, salt and pepper.
- Stir to mix well.
- Preheat the grill.
- Set the sea bass fillets in a shallow dish and lightly spoon the marinade mixture over.
- Turn the fillets so they are evenly coated in the marinade and set aside for 10 to 15 minutes (chill if the ambient temperature is quite warm).
- Put the fish fillets on the hot grill, with the orange slices alongside.
- Cook until the fish is just opaque through, 3 to 4 minutes per side.
- Turn the orange slices occasionally, so they brown evenly.
- Serve the grilled sea bass with grilled orange slices alongside.

- Heat the first 4 ingredients to boil, then lower to simmer in a pot big enough to hold the steamer.
- Add the fish on a steamer rack, top with salt, pepper, scallions, soy sauce and sesame oil.
- Cover and steam for 5 minutes until opaque; remove rack add cilantro to cooking liquid.

Steps:
- Pre heat oven to 500°F.
- Mix first 5 ingredients and 3 tsp of oil. Season with pepper or salt if needed.
- Brush oven proof glass dish with 2 tsp oil.
- Arrange fish in dish.
- Spoon sauce over fish, leaving enough to drizzle over when serving.
- Roast fish for 12 minutes until opaque.
- Top with remaining sauce.
MISO-GLAZED SEA BASS
My friend Yohko put this recipe from Epicurious.com in my "birthday book". Yohko is a great cook who was born in Japan and has lived in the Pacific Northwest as well as in the MidWest. This is a very simple preparation and procedure but it requires some specialty items that you may need to purchase in the local Asian market and liquor stores. You'll need at least 2 hours to marinate so plan ahead. (Please note the variation in reviews and reduce the sugar according to your personal taste).

- Mix sake, mirin, miso, brown sugar and soy sauce in a shallow baking dish.
- Add fish; turn to coat with marinade.
- Cover and refrigerate at least 2 hours and up to 6 hours.

- With broiler door slightly open, broil fish 6 inches from heat source until just opaque in center, about 6 minutes.

SEA BASS WITH CITRUS AND SOY
Steps:
- Mix first 6 ingredients in 8x8x2-inch glass baking dish. Add fish; turn to coat. Chill 2 hours, turning fish occasionally.
- Place steamer rack in large skillet. Arrange fish on rack. Pour marinade into skillet under rack and bring to boil. Cover skillet and steam fish until just opaque in center, about 8 minutes. Transfer fish to plates. Remove steamer rack from skillet. Boil marinade until reduced enough to coat spoon, about 6 minutes; spoon over fish. Top with green onions.

- For Fish: Lay out one big sheet of aluminum foil (large enough to wrap up the entire fish en papillote - you will bake the fish in it like a package).
