JAMES BEARD CHILI
This is unlike any other chili recipe I've had... It's been in our family longer than I've been around, but not sure of the origination. It's got unsweetened chocolate, wine, and olives in it-what could be better??!!

Steps:
- -Saute onions & garlic in the butter & oil (use a heavy dutch oven if you've got it, otherwise you can transfer to a casserole after stovetop dirctions --
- -Mix flour, Salt & Pepper in a bowl. Dredge meat in seasoned flour and add to onions. Turn meat occsionally until browned evenly.
- -Add rest of ingredients up to (including) wine and bring to a boil.
- Bake at 300 for 1 1/2 hours.
- -Add remaining ingredients and continue baking another 1/2 hour.
- Serve with rice and steamed broccoli.

MEXICAN STREET CORN

Steps:
- Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Brush corn with oil. Rewrap corn in husks; secure with kitchen string. Place in a Dutch oven; cover with cold water. Soak 20 minutes; drain., Grill corn, covered, over medium heat 25-30 minutes or until tender, turning often. Peel back husks. Spread mayonnaise over each ear; sprinkle with chili powder, cojita cheese and cilantro. Squeeze lime wedges over corn before serving.

Steps:
- Heat oil in a saucepan and add the onions, garlic and green pepper. Cook, stirring, until wilted.
- Add beef and cook, chopping down with the side of a heavy metal spoon to break up any lumps. Cook until the meat loses its raw look. Add chili powder, cumin, oregano, coriander seeds, hot red pepper flakes and bay leaf. Stir to blend.
- Add tomatoes, salt, pepper and vinegar and bring to a boil. Partly cover and let simmer, stirring often, about 30 minutes. Remove bay leaf and serve.
