JANET'S KFC SEASONED FRIED CHICKEN

This is the closest I've come to the original KFC recipe. They deep-fry theirs in a pressure fryer, and I pan fry this in only 4 tablespoons oil, so I think mine is much healthier.

Steps:

  • Sift flour and add to it all the seasonings, after having ground them fine with a mortar and pestle (a blender works well, too) Place coating in a plastic bag. Dip each piece of chicken in the beaten egg, then place in the bag and shake, making sure each piece is well coated.
  • Heat oil in large skillet and brown chicken slowly, uncovered, until all sides are nicely browned. Cover the pan and continue to fry slowly, turning pieces occasionally for about 50 minutes, until juices run clear when pierced with a fork.
  • Drain on paper towels.

4 tablespoons oil
2 cups flour
4 teaspoons paprika
1 teaspoon salt
1 teaspoon pepper
1 teaspoon poultry seasoning
1 teaspoon oregano

1 teaspoon parsley
1/2 teaspoon thyme
1 teaspoon chives
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon celery salt

Steps:

  • Mix first 6 ingredients for marinade and soak chicken for 24 hours under refrigeration.
  • Place shortening in a pressure fryer and heat over medium heat until shortening reaches 400°F In a small bowl, combine egg and milk.
  • In a separate bowl, combine remaining 6 dry ingredients.
  • Dip each piece of chicken into milk until fully moistened.
  • Roll moistened chicken in flour mixture until well coated.
  • In groups of 4 or 5 pieces, drop coated chicken into the shortening and lock the lid.
  • When pressure builds up, cook for 10 minutes.
  • Release according to manufacturer's instructions.
  • Remove to rack and drain for 5 minutes before eating.

Steps:

  • Sift together all the coating ingredients and place in a clean plastic bag. Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.
  • Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered. Once browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess oil.

  • Add the buttermilk, egg and hot sauce to a large bowl. Whisk until combined then add the chicken drumsticks to the bowl, stir and set aside to use straight away or for the best results marinate overnight in the fridge. (Optional – Check out the recipe notes section further down the recipe card for instructions on how to make your own buttermilk)
  • Add flour into another large bowl alongside with the all the 11 KFC spices & salt to make the seasoned flour. Mix until all the spices have combined with the flour evenly. Add 4 x tablespoons of the buttermilk marinade to the seasoned flour and mix. Little crumb will form which will help with the overall crispiness’ of the chicken.
  • Using hands take one drumstick out of the buttermilk marinade, shake of the excess liquid, then add to the seasoned flour. Use your hands to cover the drumsticks with the flour, apply pressure to ensure the flour adheres fully. Shake off the excess and place into the air fryer basket.
