Janey's Vegetable Noodle Soup image

Steps:

  • Bring water and olive oil to a boil in a pot over medium-high heat. Add noodles. Cook, stirring occasionally, until mostly tender, about 3 minutes. Add vegetable broth and carrot; cook and stir for 1 minute. Add green bell pepper, celery, and soy sauce; stir and bring to a boil for 1 minute more. Sprinkle green onions on top.

This recipe comes from a friend who got it from her grandmother. Very tasty and easy to fix.

Janet's Grandma's Vegetable Soup image

Steps:

  • 1. Season with meat tenderizer, pepper, rough chopped onion, and beef bouillon cubes ( 4 ).Fill with water to cover roast in pressure cooker add ( 2 ) tbps Worcestershire sauce When roast is done pull out the roast and shred. Then put the shredded roast back into the pressure cooker. Add the ( 2 ) large cans of Veg-all, corn, tomatoes, and tomato sauce. Mix and heat. Add ( 1 ) can of water.Season with more bouillon,salt and pepper to taste. Add a few drops of hot sauce.

1 beef chuck roast
2 large cans of veg-all
1 large onion
2 Tbsp worcestershire sauce
4 beef bouillon, cubes
1 can(s) tomato sauce
1 can(s) dice tomatoes
1 can(s) corn

Steps:

  • In a large saucepan, cook sausage and onion over medium heat until meat is no longer pink; drain. Stir in the water, beans, tomatoes, broth, zucchini and basil. , Bring to a boil. Reduce heat and simmer until the zucchini is tender, about 5 minutes. Garnish with cheese.

Once the oil is shimmering, add the chopped onion, carrot, celery, seasonal vegetables and 1/2 teaspoon of the salt. Cook, stirring often, until the onion has softened and is turning translucent, about 6 to 8 minutes.
  • Add the garlic, curry powder and thyme. Cook until fragrant while stirring frequently, about 1 minute. Pour in the diced tomatoes with their juices and cook for a few more minutes, stirring often.
  • Pour in the broth and water. Add 1/2 teaspoon more salt, 2 bay leaves and the red pepper flakes. Season generously with freshly ground black pepper. Raise the heat and bring the mixture to a boil, then partially cover the pot and reduce heat to maintain a gentle simmer.
  • Cook for 25 minutes, then remove the lid and add the chopped greens. Continue simmering for 5 minutes or more, until the greens have softened to your liking.
