HODAD'S BLUE JAY BURGER
Steps:
- For the Hodad's blue cheese sauce: Combine blue cheese, mayo and buttermilk in a bowl until well mixed.
- For the Hodad's blue jay burger: Cook the onion rings on a griddle until caramelized. Set aside.
- Sprinkle both sides of the beef patty with the seasoned salt. Sear on hot griddle until browned and cooked through, 3 to 4 minutes on each side. Add the cheese and let melt.
- Toast top and bottom of bun on the griddle until golden brown.
- Add mayo, mustard and ketchup to bun bottom, then add pickle chips, tomato and lettuce.
- Top with beef patty, then with Bacon Patty and 1/3 cup Hodad's blue cheese sauce, grilled onions and toasted bun top.
- Place bacon in a large pot and cover with 2 quarts water. Bring to a boil and cook until the bacon fat renders, about 45 minutes.
- Place a 4-ounce serving of bacon on a hot flat-top grill or griddle and weigh down. Cook, flipping occasionally, until both sides are crispy. Repeat with remaining bacon.

Steps:
- Mix all ingredients, except for the bacon. Spoon out for patties (making them as flat as possible) into a heated pan coated with olive oil.
- Pan fry burgers to desired internal temperature (rare to well-done).
- Layer burgers with crisp halves of bacon between.
- Top with cheese of choice, if you like. We tried Monterey Jack, but any kind will do.
- Serve on Toast or Buns. Enjoy!

- Divide ground chuck into 6 equal portions and gently from into 1/2 inch thick patties that are wider than the burger buns (as they will shrink). Use your thumb to press an indentation into the center of each patty. Cover and set aside.
- Preheat grill to medium high heat. Just before cooking, sprinkle seasoning over the patties, then place on hot grill, indent-side up. Close grill lid and cook for 3-4 minutes, until the bottom of the burger is seared and juices are accumulating on top of the burger. Flip and cook an additional 3-4 minutes or until the beef reaches 160 degrees F.
- Place cheese on burgers during the last minute of cooking. Remove to a plate and allow to rest for a few minutes before serving in a bun, with toppings.
