STRING BEANS WITH GARLIC
Steps:
- Blanch the string beans in a large pot of boiling salted water for just 1 1/2 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
- Heat the butter and olive oil in a very large saute pan over medium heat and cook the garlic for 1 to 2 minutes, tossing occasionally, until lightly browned. Add the string beans, sprinkle with salt and pepper, and toss together. Reheat the string beans and serve.

- Heat oil in a wok over high heat. Reduce heat to medium, and place beans in the wok. Cover, and cook 10 minutes, stirring occasionally. Season with garlic salt, garlic powder, pepper, and minced onion. When beans are almost tender, mix in cocktail onions with liquid. Continue cooking 5 minutes, until heated through.

- Preheat oil in deep-fryer to 375 degrees F.
- In a large bowl add the flour, cornstarch, baking powder, sugar and salt and mix to combine. Whisk in the soda water and mix until a batter is formed. Dip the beans in the batter being sure to shake off the excess. Fry the beans in batches for 2 to 3 minutes until crispy and golden. Remove to a paper towel lined sheet tray to drain. Arrange the beans on a platter and serve with warm cranberry sauce.
- Cook's Note: When frying the beans, make sure the fryer basket is submerged into the oil. Drop string beans into the basket in the oil to ensure the beans do not stick to the basket when cooking.

- In a skillet, heat oil over medium heat. Add onions, and cook, stirring occasionally until edges begin to turn golden, about 4 minutes. Add garlic, and cook 1 minute more. Transfer to pressure cooker.
- Add string beans and water. Season with salt and pepper. Place the cooker over medium-high heat. Cook for 1 minute, following manufacturer's instructions for cooking fresh beans. When beans are done, follow manufacturer's instructions for releasing pressure. Remove string beans from cooker. Taste, and adjust for seasoning. Serve immediately.
FRENCH STRING BEANS

- Preheat the oven to 425 degrees F.
- Blanch the string beans in a large pot of boiling salted water for just 4 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
- Meanwhile, in a large bowl toss the onion and bell peppers together with 2 tablespoons of olive oil and sprinkle generously with salt and pepper. Place in a single layer on a baking sheet and roast for about 15 minutes, tossing with a spatula from time to time to be sure the vegetables roast evenly.
- Just before serving, reheat the string beans in a large saute pan drizzled with a little olive oil. Sprinkle with salt and pepper and arrange on a platter. Spoon the roasted vegetables over the string beans and serve hot or at room temperature.
GARLIC-CAPER STRING BEANS
