Steps:
- Season fillets with jerk seasoning. In a large nonstick skillet coated with cooking spray, cook fillets over medium-high heat for 3-5 minutes or until fish flakes easily with a fork, turning once. Transfer to a serving platter and keep warm., In the same skillet, combine the fruit, onions, jelly and almonds; heat through. Stir in mint and lime juice. Serve with fish and rice.

We enjoyed this (almost too easy to post) recipe. We used tilapia but I think other white fish would work equally well just adjusting the cooking time per thickness of fish. Recipe source: local newspaper.

- Rub fish fillets with jerk seasoning on both sides.
- Heat oil in skillet (I used a grill pan) over medium high heat and then add fish.
- Saute for 3 minutes and turn and cook for another 2-5 minutes or until fish is done.

- Make the salsa by tossing the pineapple, shaved coconut, jalapeno and mint in a bowl. In a small bowl, whisk together the lime juice, oil and honey. Pour the dressing over the salsa and mix until evenly coated. Keep in the fridge until ready to serve.
- Pat the tilapia with a paper towel to ensure the fish is dry. Rub the Island Spice blend all over each filet of fish.
- Set the grill to medium (300F). Fold up a paper towel and dip it in oil. Using grill tongs, grab the paper towel and brush a light amount of oil on the hot grill grates.
- Place the tilapia on the grill and close the lid. After about 4-5 minutes, gently and carefully flip the tilapia over. Lower the lid and cook for another 4-5 minutes.
