COMFORTING TUNA PATTIES

My grandmother and mother made these tuna patties on Fridays during Lent. I'm not the biggest fan of tuna, but it's perfect in this dish. These patties are even good cold the next day, if there are any leftovers. -Ann Marie Eberhart, Gig Harbor, Washington

Comforting Tuna Patties image

Steps:

  • In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Transfer to a small bowl; cool., Stir in tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt and pepper. Refrigerate, covered, at least 30 minutes., Place remaining 1/2 cup bread crumbs in a shallow bowl. Drop 1/3 cup tuna mixture into crumbs. Gently coat and shape into a 1/2-in.-thick patty. Repeat. In a large skillet, heat oil over medium heat. Add tuna patties in batches; cook until golden brown, 2-3 minutes on each side. Drain on paper towels., Freeze option: Freeze cooled tuna patties in freezer containers, separating layers with waxed paper. To use, reheat tuna patties on a baking sheet in a preheated 325° oven until heated through.

TUNA FISH PATTIES

This is a great recipe I came up with to get rid of leftover bread. I generally use the contents of my vegetable drawer here so I kind of throw in whatever I have at the time, so you can use your own judgment. They taste really nice when eaten with sour cream or low-fat mayo or even on their own - though my husband prefers ketchup. I generally use this recipe as a guideline, so have fun with it!

Tuna Fish Patties image

Steps:

  • Soak bread in water in a large shallow dish until softened completely; remove from dish and squeeze as much water from bread as possible.
  • Heat 1 tablespoon olive oil in a non-stick skillet over medium heat; cook and stir onion, spinach, and garlic in the hot oil until the onion softens, about 5 minutes.
  • Mix the onion mixture with softened bread, tuna, mushrooms, zucchini, celery, eggs, dill, salt, pepper, basil, and oregano in a large bowl until combined. Form the mixture into about 24 thin, palm-size patties.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat; cook the patties in the skillet until cooked through, 2 to 3 minutes per side.

TASTY TUNA PATTIES

If you're ever pressed for time, start with a couple cans of tuna and you'll have a delicious patty in no time that you can serve a number of different ways. Add them to buns with your favorite toppings for sandwiches, serve them alongside a fresh salad, or make smaller versions of them and serve them as appetizers with tartar sauce on the side. There are a lot of great flavor elements in these easy and versatile patties, but the quantities are small so the flavor still comes out pretty mild. Steps:

  • Combine tuna, eggs, bread crumbs, Parmesan cheese, celery, lemon juice, seafood seasoning, mustard, pepper, and dill in a bowl; stir gently until fully and evenly combined. Shape mixture into 4 patties.

These amazing baked tuna patties were discovered when the kids were hungry and it was the night before grocery day! I had to do what I could with what we had to avoid getting a "We want (fill in the blank with a fast food restaurant)!" protest from the kids. I made these babies off the top of my head and they were an instant hit. The kids loved them, I loved them, and I was easily able to hide the carrots in them from my husband, so he loved them too!

Steps:

  • Pre-Heat Oven to 375.
  • Spread oil over bottom of pan (any metal pan should work, I used a pizza pan that has a lip on it).
  • Mix remaining ingredients in a large mixing bowl.
  • Divide mixture into 8 equal parts.
  • Form mixture into patties and place on the pan.
  • Bake patties for 10 minutes.
  • Turn patties over. (Be careful they may fall apart easily.).
  • Continue to bake for an additional 5-10 minutes until they start to brown.
  • Remove and let them sit for 5 minutes to firm.
