These bite-sized meatballs are a favorite of mine. Feel free to swap in different cheese for the cheddar or to serve the balls with Dijon mustard instead of the barbecue and sweet-and-sour sauces.

Steps:

  • Place a pizza stone on the middle oven rack and preheat to 500˚ F. Place a baking sheet on top of the pizza stone.
  • Warm the olive oil in a small skillet or saucepan over medium heat. Add the sage, red pepper flakes and garlic. Remove from the heat and let cool slightly; season with salt.
  • Divide the sausage into 16 small balls. Cook in a medium nonstick skillet over medium heat, stirring occasionally, until browned and cooked through, 8 to 10 minutes. Remove to a paper towel-lined plate to drain.
  • Divide the dough into 16 balls (about 2 inches each). Flatten and shape each into a 3 1/2-inch round on a lightly floured surface. Put 1 piece of cooked sausage in the center of each round and top each with a few cubes of cheese. Very lightly brush the edges of the dough with water. Bring the edges of the dough toward the center, lightly pleating to form a tight package; pinch to seal. Turn seam-side down; using a metal skewer dipped in flour, make a hole in the center of each dough ball to create a steam vent.
  • Remove the hot baking sheet from the oven and carefully line with parchment paper; place the dough balls on the baking sheet, spacing them 2 inches apart. Brush liberally with the sage oil. Transfer the baking sheet to the pizza stone and bake 5 minutes, then rotate the pan and bake until the rolls are golden brown, about 10 more minutes. Remove from the oven and brush with more sage oil. Sprinkle with the parsley and serve immediately with the remaining sage oil for dipping.

1/2 cup extra-virgin olive oil
2 tablespoons finely chopped fresh sage
Pinch of red pepper flakes
3 cloves garlic, grated
Kosher salt
2 sweet Italian sausage links (about 6 ounces), casings removed
2 pounds refrigerated pizza dough
All-purpose flour, for dusting
12 ounces Monterey Jack cheese, cut into 1/4-inch cubes
2 tablespoons finely chopped fresh parsley

SAUSAGE CHEESE BALLS

From Chef John, Foodwishes. My family loved this. I'd like to make again using a bit more meat in the ratio. I also like to add crushed red pepper to taste mixed in (I grind mine a bit finer in an old coffee grinder).

Steps:

  • Mix together sausage, cheese and green onion.
  • In separate bowl, mix together dry ingredients. (This is equivalent to biscuit mix or self rising flour--so you could substitute if you wish).
  • Mix flour mixture with meat/cheese mixture.
  • When mixed fairly well, sprinkle in milk and mix until you get mixture to where it can be shaped into balls.
  • Shape into balls about the size of a walnut or slightly larger.
  • Bake at 450° for 12 - 15 minutes or until cooked thoroughly. (I like to broil for a minute or two for extra color at the end).
  • Serve with your favorite sauce. I like to make a dijonnaise with mayonnaise and Dijon mustard to taste.

SAUSAGE CHEESE BALLS

These are a little more moist than the standard sausage ball recipe. Use whatever flavor of 'cream of' soup you like. I generally use cream of mushroom, but cream of celery or chicken is also good.

Steps:

  • Preheat oven to 375 degrees. Spray baking sheets with cooking spray.
  • Using a heavy-duty stand mixer with a dough hook (or your hands), mix the raw sausage and cheese together, then add the cream of mushroom soup. Add the garlic powder and Italian seasoning, then gradually add the biscuit mix until all is thoroughly combined.
  • Shape into small balls about the size of a walnut, and place on baking sheet. Bake for 18-20 minutes, then remove and cool on a rack.
  • You can also freeze these, either after they're cooked or (the way I prefer to do it) after you shape them and put them on the pan. I put them into the freezer for a couple of hours right on the baking sheets, then take them out and put them in a zip-top bag. Then I can take out a few at night, thaw them in the fridge, and pop them into the oven the next morning for a quick breakfast.

Steps:

  • Heat oven to 350 degrees. Grease one or two cookie sheets, depending on your oven and how many you want to cook at one time.
  • Dump sausage, baking mix, and cheese in a BIG bowl and mix with your hands. It's gross feeling if your not used to it but you have to do it this way.
  • If the mix is too dry, and mine have always been, put about 1/4 cup of the water in, mix around. If you are still not able to roll the mix into little balls because it's too dry then pour a little bit more water into it. If it gets too wet pour a little bit more baking mix into it.
  • Roll into 1 inch balls and place on cookie sheet. Bake for 20-25 minutes. They should be golden brown and sausage cooked through.
  • Repeat with remaining mix until all gone. Enjoy!

1 lb bulk sausage (hot or mild)
3 cups baking mix (I use low-fat Bisquick, but any will do)
1 lb shredded cheddar cheese
1 cup water
