- Mix together wafer crumbs, pecans, confectioners' sugar and cocoa. Combine rum, honey and water; stir into crumb mixture. Shape into 1-in. balls. Roll in additional confectioners' sugar or wafer crumbs. Store in an airtight container.

This delicious smooth confection is an impressive dessert for the holidays. These are wonderful for parties, and perfect for holiday gifts to your loved ones. A half cup of orange juice plus one teaspoon of freshly grated orange peel can be substituted for the rum in this recipe.

- In a large bowl, combine vanilla wafer crumbs, chopped nuts, 3/4 cup confectioners' sugar, and cocoa. Mix in rum and corn syrup. Shape dough into 1 inch balls; roll in confectioners' sugar.
- Store rum balls in an airtight container for 2 to 3 days to develop flavor. Roll them again in confectioners' sugar before serving.

- In a large bowl, mix confectioners' sugar and cocoa until blended. Add crushed wafers and walnuts; toss to combine. In another bowl, mix corn syrup and rum; stir into wafer mixture., Shape into 1-in. balls. Roll in additional confectioners' sugar. Store in an airtight container.

JOYOUS RUM BALLS
Do you like the taste of the candy bar almond joy? Well then you'll enjoy these NO-BAKE rum balls. Approximately one cup and a half of Myers Coconut Rum breaks down to 6 rum balls being 1 shot of booze. yields about 5 - 6 dozen rum balls (I don't have an accurate count b/c I... and a roommate (yea right) snacked while I was making them - whoopsiedaisy MY BAAAD). You can grind fine the vanilla wafers or stomp on with a rolling pin fine to medium coarse the way I like it. The 1 1/4 cup of Myers coconut rum is more like a cup and a half to taste.

- in a large non metal mixing bowl with a wooden spoon:
- mix the smashed nilla wafers with the turbinado sugar and the rum.
- incorporate the caro light corn syrup.
- incorporate the melted semisweet chocolate chips.
- let the mixture cool to a workable consistency
- line a jelly roll tray with parchment, put your surgical gloves on to start rolling the rum balls about 1 tsp in size - or slightly smaller than a doughnut hole.
- As you roll the rum balls up (slightly smaller than a doughnut hole)~~
- Roll them in a tray of coconut flakes and chopped almonds (I love the trader joe's sesame honey almonds), or you can embed a whole almond on the rum ball and roll in powdered sugar and coconut flakes. Either way is quite tasty.
- Place rum balls on the parchment and let set up for a little while - you can refrigerate them.

RUM BALLS
I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.

Steps:
- Place vanilla cookies in a food processor and process into fine crumbs.
- Heat chocolate chips and corn syrup together in a saucepan over low heat. Cook, stirring often, until chocolate is melted and smooth, about 5 minutes. Remove from heat and stir in rum and confectioners' sugar until smooth. Fold in cookie crumbs; dough will be sticky.
- Place saucepan in the refrigerator until dough is firm and easy to roll, about 15 minutes. Cover 2 plates with waxed paper; dust with confectioners' sugar.
- Roll dough into 1-inch balls and place on the prepared plates. Dust rum balls with confectioners' sugar. Refrigerate until firm, about 30 minutes.
- Remove rum balls from refrigerator and transfer to a resealable bag, including the extra confectioners' sugar. Seal the bag and shake to coat the rum balls completely with confectioners' sugar.
