NO-BAKE CHOCOLATE COCONUT COOKIES
These are super yummy and super easy! The combination of the chocolate, coconut, and oats is wonderful. No baking required! These also freeze well.

Steps:
- Line a baking sheet with waxed paper.
- Mix oats and coconut in a large bowl until thoroughly combined.
- Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

- Preheat oven to 325°. Cream butter, brown sugar and vanilla. Add eggs, one at a time, beating well after each addition. Combine next five ingredients; add to creamed mixture and mix well. Stir in coconut., Shape into 1-in. balls. Place 2-1/2 in. apart on greased baking sheets (cookies will spread). Place pecan half in the center of each cookie and push down slightly. Bake 14-16 minutes.

These cookies are soft and chewy and didn't last a day after making them! Once I thought I HATED coconut, but these made me realize I just didn't like overly sweet coconut. These are fabulous! Made with whole wheat flour and oatmeal, it's a better alternative to the traditional cookie.

- Beat brown sugar, vegetable oil butter spread, and egg with an electric mixer in a bowl until smooth. Stir in vanilla extract, baking soda, and salt. Add coconut, flour, and oats; stir until just moistened. Fold in chocolate chips, almonds, and yogurt.
- Drop spoonfuls of the dough 2 inches apart onto ungreased baking sheets.

- Beat butter and sugars together at High speed until fluffy.
- Add eggs and beat on medium speed until blended.
- Beat in vanilla, baking soda and salt until mixed in fully.
- Add flour and mix at low speed until blended.

- Preheat oven to 375 degrees F (190 degrees C). Line baking sheet with parchment paper.
- Combine flax meal and water. Let stand 10 minutes.
- Combine flour, cocoa powder, oats, and baking soda in large bowl; set aside.
- Beat 1 cup Becel® with Oat Beverage margarine with sugars in another large bowl with electric mixer until light and fluffy, about 5 minutes. Beat in flax meal mixture and vanilla. Gradually beat in flour mixture just until blended. Stir in chocolate chips.
- Drop dough by heaping tablespoonfuls onto prepared baking sheet, 2 inches (5 cm) apart. Recipe will yield about 48 cookies. Bake 10 minutes or until edges are just set. Do not overbake.
- Place baking sheet on wire rack and cool for 5 minutes. Transfer cookies to wire rack and cool completely.
- Beat 1/2 cup Becel® and non-dairy cream cheese in large bowl with electric mixture until creamy. Add icing sugar, coconut extract, and vanilla extract, and beat until fluffy. Stir in shredded coconut.
- Once cookies have cooled completely, spread about 2 tablespoons coconut cream on flat side of one cookie and top with another cookie, pressing down until cream comes just to the edge. Repeat with remaining cream and cookies.

This is my sister's recipe--she's been making these for years. They are sinful!This recipe makes a lot of cookies. I got about 8 dozen,depending on the size of the cookie you make.

Steps:
- In a large bowl combine butter, sugars, vanilla, eggs and oatmeal with a mixer.
- Add all remaining ingredients except chocolate chips.
- Use hands to blend all together, or a powerful mixer if you have one.
- Add chocolate chips and incorporate into dough.
- Place teaspoonful of dough onto greased cookie sheet, no need to flatten out.
- Bake in 350° oven for about 10 minutes until golden brown.
- The middles may still seem undercooked, but it makes for a very nice moist, chewy cookie.
- Note: The cooking time I have was for 2 cookie sheets at a time for 8 dozen cookies which works out to about 40 minutes cooking time. This is in a convection oven.
