CREAM CHEESE JALAPENO HAMBURGERS
These are the BEST burgers I've ever had. My mother made a version of these and I changed it a little....instead of Jalapeno peppers you can add ANYTHING or just do the cream cheese...trust me...you're family and/or guests will BEG for the recipe!

Steps:
- Preheat a grill for medium heat. When hot, lightly oil the grate. In a medium bowl, stir together the jalapenos and cream cheese.
- Divide the ground beef into 16 portions and pat out each one to 1/4 inch thickness. Spoon some of the cream cheese mixture onto the center of 8 of the patties. Top with the remaining patties, pressing the edges together to seal.
- Grill for about 10 minutes per side, or until well done, taking care not to press down on the burgers as they cook. This will make the cheese ooze out. Serve on buns with your favorite toppings.

- Brush jalapenos with oil. Grill, covered, over medium heat for 3-5 minutes or until tender, turning occasionally. When cool enough to handle, finely chop. In a small bowl, combine the bacon, cream cheese and jalapeno until blended., In a large bowl, combine the garlic, salt, lemon pepper, pepper and paprika. Crumble beef over mixture and mix well. Shape into 8 thin patties. Spoon bacon mixture onto center of 4 patties; top with remaining patties and press edges firmly to seal., Grill burgers, covered, over medium heat or broil 4 in. from heat for 6-7 minutes on each side or until a thermometer reads 160° and juices run clear. Top with pepper jack cheese. Cover and cook 1-2 minutes longer or until cheese is melted., Grill buns, cut side down, over medium heat for 30-60 seconds or until toasted. Serve burgers on buns with lettuce, tomato and guacamole.

STUFFED JALAPENO POPPER BURGERS
When I was young my mother would reward me for practicing the piano. My favorite request was a trip into town,to the only gas station for miles around, and I would get my favorite food on earth; Jalapeno Poppers! This burger is inspired by my favorite childhood treat! I hope you enjoy it as much as I do!

- 1. In a medium mixing bowl, combine cream cheese, chilies, and shredded cheese. Mix on high speed until thoroughly combined. Set aside in freezer.
- 2. In a large mixing bowl combine ground beef and 1 cup salsa verde and egg; lightly mix until combined. divide into 8 equal portions, divide each portion into two 1/4 in. thick patties. Place a generous tablespoon of chilled cream cheese mixture in the centers of half the patties, slightly spread cheese mixture leaving a border of meat around edge. Top with remaining patties; pinch to seal edges.
- 3. Place burgers on grill at medium high heat; grill for 5 minutes then carefully flip patties. Cook an additional 2 minutes then spread remaining chili-cheese mixture on top of each burger (1 to 2 tablespoons)close the grill lid and cook until cheese is melted or bubbled (about 2-3 more minutes.)Also place buns on grill, cut side down and grill until just "toasty". Burgers are done when internal temp. reaches 158-160*F. Serve patties on bun, with onion, tomato,cilantro, desired amount of jalapenos and lettuce. Enjoy hot!

- Heat broiler to high. Place jalapeños cut side down on a baking sheet lined with aluminum foil. Coat tops with cooking spray. Broil on middle rack of oven until just tender, 5 to 6 minutes. Cool slightly. Coarsely chop. Stir together chopped jalapeños, Cheddar, cream cheese, cayenne, and 1 teaspoon of the salt until smooth.
- Place beef, garlic powder, onion powder, pepper, and remaining 1 1/2 teaspoons salt in a large bowl. Using your hands, combine thoroughly. Divide into 4 (6-ounce) balls. Flatten each ball into a 6-inch circle. Place 2 tablespoons of the cheese mixture in center of each burger leaving a 1-inch rim. Carefully fold edges of meat over to cover filling, and seal; flatten into 3/4-inch thick patties. Chill 15 minutes.
- Heat oil in a nonstick skillet over medium-high. Cook burgers to desired degree of doneness, about 3 minutes per side for medium. Transfer to a paper towel-lined plate.
- Spread 1 tablespoon mayonnaise on bottom and top halves of buns. Top bottom bun with a patty, tomato slice, onion, and pickled jalapeño, if desired. Top with top halves of buns.
