COOKIE DOUGH BROWNIES

When I take these rich brownies to any get-together, I carry the recipe, too, because it always gets requested. Children of all ages love the tempting "cookie dough" filling. This special treat is typically the first to be gone from the buffet table-even before the entrees! -Wendy Bailey, Elida, Ohio

Steps:

  • Preheat oven to 350°. In a large bowl, beat eggs, oil, sugar and vanilla until well blended. Combine flour, cocoa and salt; gradually beat into egg mixture. Stir in walnuts if desired., Pour into a greased 13x9-in. baking pan. Bake 30 minutes or until a toothpick insert in center comes out with moist crumbs. Cool completely. , For filling, in a large bowl, cream butter and sugars until light and fluffy. Beat in milk and vanilla. Gradually beat in flour. Spread over brownies; chill until firm. , For glaze, in a microwave, melt chocolate chips and shortening; stir until smooth. Spread over filling. Immediately sprinkle with nuts, pressing down slightly. Let stand until set.

2 tablespoons 2% milk
1 teaspoon vanilla extract

GLAZE:
1 cup semisweet chocolate chips
1 tablespoon shortening
3/4 cup chopped walnuts

COOKIE DOUGH BROWNIES

We took all the best shortcuts to make this the easiest, most delicious recipe for cookie dough brownies you've ever had! While the whole recipe will take a couple hours to bake and be ready to serve, this cookie dough brownie recipe only takes about 15 minutes to prep. Start by mixing up Betty Crocker™ salted caramel brownie mix, a package of refrigerated chocolate chip cookie dough and top it all with Betty Crocker™ Rich & Creamy chocolate frosting. Instead of enjoying a tasty brownie and cookie dough separately, mix them together for your new favorite dessert.

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom and sides of 13x9-inch pan with shortening or cooking spray. (See Kitchen Tip regarding disposable foil pan.) Set caramel pouch from brownie mix aside. In large bowl, stir brownie mix, water, oil and egg with spoon until well blended. Spread half of batter in pan.
  • Break cookie dough into small pieces. Sprinkle pieces evenly over brownie batter in pan; lightly press into batter. Squeeze pouch of caramel from brownie mix to soften. Cut 1/4-inch tip from corner of pouch; squeeze caramel between pieces of cookie dough, using entire pouch. Spoon remaining brownie batter over caramel and cookie dough.
  • Bake 34 to 38 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 1/2 hours.
  • Frost with chocolate frosting. For brownies, cut into 8 rows by 6 rows.

  • Preheat the oven to 325 degrees F. Spray a 9x13-inch pan with nonstick spray. In a medium glass bowl, melt the chocolate in the microwave in short bursts of 30 seconds; stir after each burst and remove from microwave when melted and smooth. Set aside to cool slightly. In a large mixing bowl, whisk together the butter and brown sugar. Add the eggs and vanilla extract and whisk those in too. Mix in the melted chocolate. Whisk in the flour and mix just until combined (don't over-mix). Stir in the chocolate chips. Spread the batter into the prepared pan. Bake 25 to 35 minutes. Watch closely and remove from the oven when a toothpick inserted into the center comes out clean. Let cool completely.
  • In a medium bowl, use an electric mixer to combine the butter, brown sugar and white sugar. Mix in the milk and vanilla. Mix in the flour just until combined (see recipe notes about how to "cook" the flour before using). Stir in the chocolate chips.
  • Spread the cookie dough over the cooled brownies. Refrigerate until the dough is quite firm. It's okay to speed up the process and place it in the freezer too. The firmer the dough, the easier it will be to cut into neat squares. Use a sharp knife to cut the brownies. You may need to wipe the knife off with a paper towel in between cuts since the fudgy brownies and cookie dough will tend to stick to the knife a bit. These brownies are best to serve placed inside cupcake papers and served with a fork.
  • If you'd like to add chocolate drizzle on top, melt 1/2 cup chocolate chips with 1 teaspoon of shortening in the microwave; stir until smooth. Scoop the melted chocolate into a zip baggie and snip off the corner. Squeeze the bag to drizzle the chocolate on top of each brownie. Sprinkle additional chocolate chips on top, if desired.
