WHEAT CRACKERS

This thin wheat cracker is simple and thrifty to make. It will taste great with almost any dip or spread, and they will have much more character than factory made crackers.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together the whole wheat flour, all-purpose flour, and 3/4 teaspoon salt. Pour in the vegetable oil and water; mix until just blended.
  • On a lightly floured surface, roll out the dough as thin as possible - no thicker than 1/8 inch. Place dough on an ungreased baking sheet, and mark squares out with a knife, but don't cut through. Prick each cracker with a fork a few times, and sprinkle with salt.
  • Bake for 15 to 20 minutes in the preheated oven, or until crisp and light brown. Baking time may be different depending on how thin your crackers are. When cool, remove from baking sheet, and separate into individual crackers.

Trust me- you won't miss the salt in these crackers. I have no idea where I got this recipe, but these are sooo good. I love them. I have no idea what to compare the taste to; so you'll just have to try it yourself and find out! :]

Low-Sodium Whole-Grain Crackers image

Steps:

  • In medium bowl, stir together first 5 ingredients. Add water and oil. Using rubber spatula stir until dough forms. Gather dough into a ball. Divide dough in half.
  • On lightly floured surface, roll out each dough half to a 14 inch square. Cut each square into 3 1/2 inch squares, then cut each smaller square diagonally in half to form triangles. You may have to add a little water in every now and then if it gets too dry. Place triangles, 1/2 inches apart, on ungreased baking sheets.
  • Bake in 350 degree oven for 18 minutes or until golden brown. Remove from baking sheets; cool on racks. Store in airtight container. Makes 64 crackers.

  • Preheat the oven to 300°F. Lightly grease two baking sheets; if you have parchment, you'll be using it to roll, transfer, and bake the crackers, so you won't need to grease your baking sheets., Whisk together the flour, sugar, salt, cinnamon, and baking powder, if you're using it; if you're using baker's ammonia, don't mix it in yet.
  • If you're using baker's ammonia, dissolve it in 1 tablespoon of the water before adding it to the remaining liquid ingredients., Add the liquid ingredients to the dry mixture, stirring to form a cohesive dough., Divide the dough in half, and shape each half into a flattened block., Working with one piece of dough at a time, roll it between two pieces of lightly greased parchment or waxed paper until it's 1/16" thick.
  • Try to keep the dough a uniform thinness throughout., Transfer the rolled-out dough to your prepared baking sheet; if it's on parchment, peel off the top piece, and lay the bottom piece on the baking sheet.

  • Using your hands, combine flour and 1/3 cup of water in a medium bowl. If adding herbs, add 1 tsp per batch. Mix well until all the flour is wet. The dough needs to be stiff, but add additional water 1 Tbsp at a time if the dough is too stiff.
  • Using a rolling pin, roll half of the dough out onto a lightly floured silpat mat. Roll the dough to each edge and corner of the mat, rotating, flipping, and using flour as needed to prevent sticking. Roll the dough as thin as possible for a crunchy cracker, or leave it slightly thicker for a chewier cracker. Repeat with other half of dough.
  • Score the dough into desired size using a pizza cutter or a knife. Prick holes onto each cracker using a fork.
