KATHY"S EASY NOT SO SPICY CHILI
This is really easy takes no time at all to put together and tastes great. This can also be prepared in a slow cooker.

Steps:
- Brown meat in skillet. Combine all the ingredients in a large stock pot over medium heat. Stir to combine and bring to a boil.
- Cover and reduce heat to simmer and simmer for 2 1/2 hours, stirring occasionally. Remove from heat.
- Let sit for about 10 minutes (be sure to remove the bay leaf before serving) then serve.
- Serving suggestions: Top with bacon bits and cheese/place over a small amount of cooked pasta or rice.

HONEY GARLIC CHILE BURGERS WITH MANGO SLAW
My local butcher in Southampton, New York makes a garlic chile chicken sausage with traditional Thai ingredients that I love. So, I wanted to make my own version of that, but in burger form! I love the fresh flavor of this burger. The cool, crisp cabbage and sweetness of the mango in the slaw pair perfectly with spicy chile garlic paste and the salty umami flavor of the fish sauce in the patty. Every bite is better than the last!

Steps:
- For the patties: In a medium bowl, combine the ground chicken, fish sauce, soy sauce, chile-garlic paste, garlic, ginger, sesame oil, cilantro and mint. Gently but thoroughly combine with your hands and form into 4 equal patties.
- Preheat the avocado oil in a large skillet over medium-high heat. Cook the patties until golden brown and the internal temperature reaches 165 degrees F, about 5 minutes per side.
- For the slaw: Meanwhile, in a large bowl, whisk together the lime juice, avocado oil, rice vinegar, honey and salt and pepper to taste. Add the cabbage, bell pepper, mango, cilantro, mint and scallions and toss to coat well. Season with salt if necessary. Set aside.
- For the mayo: In a small bowl, whisk together the mayonnaise, chile garlic paste and honey. Set aside in the refrigerator until ready to use.
- Spread the mayo on the rolls. Transfer the patties to the rolls and top with the slaw. Serve.

CINCINNATI-STYLE CHILI

- For the chili: In a stockpot or Dutch oven, combine the tomato sauce, tomato paste, onions, chili powder, cocoa powder, sugar, kosher salt, cinnamon, cumin, garlic salt, allspice, pepper, cayenne, cloves, bay leaves, beef (do not brown first) and 2 cups water. Mix until combined. Cover and simmer over medium-low heat for approximately 2 hours. Stir in the vinegar and simmer for another 30 minutes.
- To serve: Serve on a bed of spaghetti and top with the beans, onions and a mound of cheese (or any preferred combination). Add hot sauce, if desired, and eat with oyster crackers.
KATHY'S SALSA CHILI
my husband loves it on cold chilly nights. its also good on hot dogs. i put the salsa in it one night because i couldn't get it hot enough for taste. you can use mild or hot salsa - it doesn't matter.

My mom's chili is the best! You can add hot sauce or peppers if you like it hot, like I do. Around here, everyone makes chili "soup" because chili with noodles is the norm.

Steps:
- Cook hamburger. Drain.
- Return hamburger to soup pot. Add diced tomatoes.
- Cook 2-3 minutes.
- Add Chili-O mix, stir. Add the rest of the ingredients except pasta.
- Bring to a boil. Add pasta.
- Bring to a boil and lower heat to medium.
- Cook 10-15 minutes until pasta is soft. Can simmer for 15 more minutes. Stir pasta often.
