COLONEL SANDER'S KENTUCKY FRIED CHICKEN

While I'm not claiming it tastes just like the KFC recipe, this is truly an AWESOME recipe for fried chicken!! My mom has been making this since I was a wee little one, and I still absolutely LOVE it! My whole family really enjoys this chicken. The ingredients are a little different, but don't let that scare you. Make it once, and you'll be hooked! Prep. time includes refrigeration time.

Steps:

  • In small bowl, combine first 6 ingredients and stir until smooth, thick paste is formed.
  • Spread evenly over chicken.
  • Place coated chicken in large bowl, cover tightly, and refrigerate for at least 2 hours.
  • Pour oil in large, heavy skillet or deep fryer to at least a 3-inch depth, and heat to 425 degrees.
  • Meanwhile, place soda water in bowl, and dry pancake mix in a seperate bowl.
  • Place chicken in soda, then dredge with pancake mix.
  • Set aside to dry a few min.
  • Fry a few pieces at a time uintil browned (about 5 minutes), and place on large baking sheet.
  • Bake, uncovered, for 30 minutes at 350 degrees.

2 packages dried Italian salad dressing mix
3 tablespoons flour
2 teaspoons salt
1 dash black pepper
1/4 cup lemon juice
2 tablespoons vegetable oil
2 1/2-3 lbs broiler-fryer chicken pieces
2 cups carbonated soda water
2 cups dry pancake mix
oil, for frying

Steps:

  • Wash and pat dry chicken. Make a paste with Italian dressing,flour,salt,lemon juice, and butter. Brush to coat chicken. Place chicken in a large bowl cover and chill several hours. 1 1/2 Hours before cooking place 1/2" oil in skillet so chicken will not be crowded. Mix pancake mix, paprika, sage and pepper in separate dish. Dip chicken in milk then pancake mixture. Coat well. Lightly brown in oil 4 minutes on each side. Place in shallow pans. Spoon rest of milk over pieces. seat with foil and bake @400 until chicken is crisp. Baste with milk again and enjoy KFC lovers!

3 - lbs. chicken (your preferance)
2 package(s) good seasoning italian dressing dry mix
3 cup(s) flour
2 teaspoon(s) salt

KFC - Creamy Coleslaw - Clone image

Steps:

  • 1. Shred or mince cabbage, carrots and onions very fine, to size of a grain of rice.
  • 2. Mix mayo, sugar, milk, buttermilk or sour cream, lemon juice, white vinegar, salt and pepper until smooth.
  • 3. Add sauce to the well mixed and well distributed cabbage, carrots and onion. Stir and incorporate well.
  • 4. Place in refrigerator and allow at least 2 hours before serving. Best if allowed to set in fridge overnight.
  • 5. Note: A food processor works best for mincing the veggies. The alternative is the smaller holes of a handheld shredder. Yields about a quart and a half.
  • 6. As I noted, much of the appeal of KFC's slaw is the texture as well as the flavor. Enjoy!

1/2 c mayonnaise ( prefer hellmanns)
1/3 c sugar granulated
1/3 c milk
1/3 c buttermilk (you can sub with 2 teaspoon sour cream)
2 Tbsp lemon juice fresh or real lemon from bottle
1 1/2 Tbsp white vinegar
1/2 tsp salt
1/8 tsp pepper
1 medium head of cabbage grated very fine
1/4 c carrots, grated very fine
2 Tbsp sweet onion minced very fine
