SHER-A-PUNJAB ONION CHUTNEY

I begged for this recipe at my favorite Indian restaurant. It is quite unlike any other onion chutney recipe that I've tried. It is surprisingly simple and full of taste. The ketchup and vinegar produce an orange hue and preserve the crunch of the onion. Serve as a garnish with toast. Try it!

Steps:

  • Mix onion, vinegar, ketchup, sugar, paprika, salt, and cayenne pepper together in a bowl until smooth.

1 sweet onion (such as Vidalia®), minced
3 tablespoons white vinegar
1 tablespoon ketchup
1 teaspoon white sugar
1 teaspoon paprika
½ teaspoon salt
½ teaspoon cayenne pepper

CHUNKY KETCHUP

I created this chunky homemade ketchup to jazz up chopped steak sandwiches and hot sausage sandwiches for my family. It's so delicious and fresh-tasting. I gave some to our friends, too, and they enjoyed it on hamburgers and even stuffed peppers. -Susan Stahr, Driftwood, Pennsylvania

Steps:

  • In a large saucepan, combine the tomatoes, onion, green pepper, sugar, tomato paste and salt; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, about 1-1/2 hours., Stir in vinegar; heat through. Cool to room temperature; store up to 2 weeks in the refrigerator.

  • Keep your lid handy. Add the mustard seeds and the cumin seeds; they should start enthusiastically popping upon contact with the oil, so cover the pot until the spluttering subsides.
  • Add the onions, garlic and ginger. Saute until softened and just starting to brown, about 10 minutes.
  • Add turmeric, garam masala and paprika. Stir and cook about 30 seconds. Then add the vinegar (standing back so you don’t inhale the fumes!), and cook until vinegar has reduced by about half.
