LINGUICA AND GREEN BEANS

This recipe is well known to Portuguese families. Linguica is a spicy Portuguese sausage and can be found in specialty markets, some chain markets or online at such places as Gaspars.com. TIP: I like to add 1 large can of crushed tomatoes with puree instead of the tomato sauce. This makes it more like a stew and thicker.

Steps:

  • Saute onion, garlic, and bell pepper in 1-2 Tablespoons butter or olive oil until onions are tender.
  • Place onions,garlic, bell pepper, potatoes, linguica, and green beans in a large saucepan.
  • Add enough water to cover.
  • Add All-spice, red pepper, tomato sauce or crushed tomatoes, salt and pepper.
  • Cover and simmer until beans are crisp tender and potatoes are fork tender (approx. 1 hour).

Portuguese Sausage and Bean Stew image

Steps:

  • If using dried beans, add the beans to a large bowl, cover by 2 inches with cold water and let soak for at least 8 hours, or overnight. Drain and set aside. If using canned beans, drain and rinse.
  • Add the bacon, if using, to a large, heavy-bottomed pot over medium heat and cook until browned and crisp, about 10 minutes. Remove the bacon and set aside. Discard all but 1 tablespoon of the fat and return the skillet to the stovetop. Add the sausage and cook until browned. With a slotted spoon, remove the sausage to a bowl and reserve.
  • Discard all but 1 tablespoon of the fat from the skillet and return to the stove over medium heat. When the fat shimmers, add the onion and garlic, stir to coat in fat, and cook until golden brown, about 4 minutes. Stir in the tomato paste and cook until fragrant, about 30 seconds.
  • Add the potatoes and stir to coat in the tomato paste. Add the beans, chorizo, and all remaining ingredients, except the bacon, and bring to a boil over high heat. Reduce the heat to medium-low and simmer until the flavors have melded and the dried beans are cooked through, about 1 to 1 1/2 hours. Crumble the bacon into beans, and season with additional salt, if needed. Remove the bay leaf, transfer the beans to a serving bowl and serve.

this is my portuguese boyfriend's mother's recipe & if he knew i posted it here he'd kill me! Steps:

  • snap off ends of green beans & break larger beans in half, throw in a big pot.
  • quarter half an onion & throw it in with the green beans.
  • slice linquica into 1 inch slices & throw in the pot.
  • add garlic, bay leaves & sea salt.
  • add only as much water as necessary to completely cover ingredients.
  • bring to a low boil, cover & let cook for 30 minutes, stirring occasionally.
  • peel potatoes & cut into quarters.
  • add diced tomatoes (undrained), el pato sauce (or regular tomato sauce if el pato isnt available) & tomato paste.
  • return to a low boil & add potatoes.
  • let boil 30 minutes or until potatoes are done.
  • taste & adjust seasonings if necessary.

Steps:

  • In a large saucepan, cook meat in 1 tablespoon butter until browned; drain and set meat aside. In same saucepan, saute the celery, onion and garlic with remaining butter until tender. Stir in the tomatoes, 3/4 cup water, salt, oregano, pepper and reserved meat. Bring to a boil. Reduce heat; cover and simmer for 1 hour., Stir in beans and parsley. Return to a boil. Reduce heat; cover and simmer for about 30 minutes longer or until meat and beans are tender. Combine cornstarch and remaining water until smooth. Gradually stir into stew.
