KITTENCAL'S EASY TUNA OR CHICKEN NOODLE CASSEROLE

This is a delicious casserole that can be made using either tuna or 1-1/2 cups or more of cooked cubed chicken or even cooked turkey --- for a thinner sauce use 1 cup of milk or half and half instead of 3/4 cup, prep time includes boiling the egg noodles, if you are not a garlic-lover then you may omit the garlic powder and to zing the flavor up even more add in 1-1/2 tablespoons of lemon juice

Kittencal's Easy Tuna or Chicken Noodle Casserole image

Steps:

  • Preheat oven to 375 degrees F.
  • Grease a 2-quart casserole dish.
  • Cook the egg noodles in boiling salted water; drain then toss with 2 tablespoons butter.
  • In a large saucepan, mix the undiluted mushroom soup, garlic powder, Parmesan cheese (if using) milk or half and half, sour cream, salt, pepper, chopped onion, pimiento, bell pepper and celery; cook over low heat, stirring frequently for 15 minutes.
  • Add in the tuna or chicken; mix to combine.
  • Combine the mixture with the cooked egg noodles.
  • Transfer to prepared greased baking dish.
  • Sprinkle top with the broken Ritz crackers.
  • Bake for about 25 minutes.

6 ounces egg noodles
2 tablespoons butter
1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
1/2-1 teaspoon garlic powder (or to taste, I use 1 teaspoon)
3 -4 tablespoons grated parmesan cheese (optional)
3/4 cup milk (or can use half-and-half cream)
1/2 cup sour cream (can increase to to 3/4 cup)
1/4-1/2 teaspoon seasoning salt (or to taste, or use white salt)
1/2 teaspoon fresh ground black pepper (or to taste)
1 small onion, finely chopped (can use 2 green onions)
1/4 cup pimiento, chopped
1 small green bell pepper, finely chopped
1 large celery rib, diced
1 (6 1/2 ounce) can tuna, drained and flaked (can add another 3 ounces for a more meatier casserole if desired, or use cooked chicken or turkey)
12 -15 butter flavored crackers, broken in pieces (such as Ritz Crackers)

KITTENCAL'S 5-MINUTE CINNAMON FLOP BRUNCH CAKE

Except for the the milk and small amount in the egg, the cake itself has very little fat and using low-fat milk will keep the fat to a minimum, I have stated the egg as optional, I strongly suggest to add it in for a more cake-like texture -- If you are looking for a fancy cake to serve then this is not it however for the ease of this cake it is darn good and makes a great weekend brunch cake, it's like a combination of a cake and cinnamon bun all in one, ridiculously simple to make as it's all mixed by hand and takes like 5 minutes to throw together, try adding in some chopped strawberries, apples or blueberries, raisins or dried cranberries, this recipe is a blank canvas, so go ahead and add in fruit, nuts chocolate chips whatever you wish, and to kick this up a notch drizzle recipe#120835 on top :) --- servings are only estimated

Kittencal's 5-Minute Cinnamon Flop Brunch Cake image

Steps:

  • Set oven to 350 degrees F.
  • Prepare a greased 13 x 9-inch baking dish, or two 8 or 9-inch round cake pans (although the batter will seem like it will fit into only one 8 or 9-inch pan, this flop rises very high and will run over the sides if baked in just one pan).
  • In a bowl mix the 2 cups flour, 1-1/4 cups white sugar, milk, vanilla or almond extract, baking powder, pinch of salt and egg (if using) until just combined careful not to overmix.
  • Pour into prepared baking pan/s.
  • Generously spread brown sugar and cinnamon on top.
  • If desired sprinkle chopped walnuts or pecans over top.
  • Drizzle melted butter over top.
  • Bake for about 20-25 minutes for 8 or 9-inch round cake pan, and about 30 minutes for a 13 x 9-inch pan.

2 cups all-purpose flour
1 1/4 cups sugar (add in more for a sweeter taste)
1 1/4 cups milk
1 -2 teaspoon vanilla (optional) or 1 -2 teaspoon almond extract (optional)
3 teaspoons baking powder

CHINESE NOODLE & VEGETABLE STIR FRY (FOR ONE)

A modified Chinese noodle recipe from KittenCal's 5-Minute Chinese Noodles, with a healthy vegetable stir-fry. You can use any kind of noodles, actually. The gravy is what really makes the dish. :D

Chinese Noodle & Vegetable Stir Fry (For One) image

Steps:

  • Wash the cooked spaghetti, make sure it is damp.
  • Prepare broccoli florets. Peel and slice carrot. Slice button mushrooms into thin slices. Chop up garlic cloves.
  • Heat up some olive oil in a wok. When hot, pour out excess oil from wok. (I don't like my food oily, so I do this; but it's optional.).
  • Fry 1/2 of the chopped garlic until fragrant. Add carrots and stir-fry, making sure heat is evenly spread. After about a minute, add broccoli florets. Stir-fry for a few minutes, until broccoli begins to darken, and then add the mushrooms and continue stir-frying for about a minute.
  • Turn heat down and add 1/2 cup water to the wok. Add 1 tbsp soy sauce and 1 tbsp mirin sauce. Continue stir-frying for a couple of minutes.
  • Turn the stove off and cover the wok with a lid to make sure it remains warm.
  • Prepare another wok by heating up some olive oil. Pour out any excess oil.
  • Fry the rest of the garlic until fragrant. Add the spaghetti and stir-fry, making sure to mix well.
  • Add 2 tbsp soy sauce (or to taste) and mix well. Turn heat down a little bit and add 1/4 cup water. Continue stir-frying for a few minutes before turning your stove off.
  • Pour spaghetti and the spaghetti's 'sauce' into a plate. Add the vegetable stir-fry on top, making sure that the vegetable stir fry's sauce is also added inches.
  • Serve hot.
