KOSSMAN COWBOY COOKIES
these are the best cookies. Don makes them, and Brix loves them. He told his mother to make them like grandpa lol. Don says this is doubled recipe and Darlene said these were the kid's favorite. Very old recipe. i wrote the recipe the way that they made them but i only used 1 bag of chips for this whole recipe and was enough for me , this makes alot of cookies i would go 1/2 on it next time

Steps:
- Cream shortening and sugars.
- Add molasses.
- Sift dry ingredients.
- Beat eggs til fluffy and add to creamed mixture.
- Add half of flour mixture.
- Add 3 packages chocolate chips (i.e. 7 cups).
- Add rest of flour and oatmeal.
- (Don says really hard to mix at this point).
- and it is you need a very large bowl
- Bake 8 to 10 minutes at 400°F.( i went about 11 to 12 minutes they come out a little brown because of molasses ).
- (Don has old oven--check sooner).
- Not sure how many this makes. My best guess--a lot. i did about 60 cookies a a teaspoon and still had alot of batter left.

COWBOY COOKIES
Delicious cookies with a little bit of everything - crunchy, chewy... yum! I saw other similar recipes in the database, but none exactly like this. From Canadian Living. I like to add nuts to mine as well, for a cookie packed with stuff!!! If you're not a raisin fan, use dried cranberries, or more nuts and chocolate chips.

- Preaheat oven to 350, and line cookie sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- In a separate bowl, beat together butter and sugar (both kinds), until fluffy. Beat in egg & vanilla.
- Using a wooden spoon, stir in oatmeal, cornflakes, rasins, and chocolate chips, until combined.
- Drop by generous tablespoons, 2" apart, onto parchment paper lined sheets. Bake in 350 oven until edges and tops begin to brown, about 12-14 minutes. Let cool on racks.

- Preheat oven to 350ºF.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
- In a second bowl, beat the butter on medium speed until smooth. Add the sugar and brown sugar and beat for another 2 minutes. Add the eggs one at a time, beating well after each addition. Mix in the vanilla.
- Stir in the flour mixture, blending until just combined. Add the chips, oats, coconut, and pecans and stir until fully incorporated.
- Using a standard ice cream scoop, drop onto an ungreased baking sheet, making sure to allow plenty of room between cookies.
- Bake for 13 minutes or until the edges are set and golden brown.
- Allow the cookies to cool on the pan for 1-2 minutes before placing on a cooling rack.

These are the best cookies! I always mix the chocolate chips (mini's, milk choc chunks, and semi sweet morsels). They are big, almost a meal in themselves!

- Heat over to 350°.
- Mix flour, baking soda, cinnamon and salt in bowl.
- Beat butter on medium speed until smooth and creamy, gradually beat in sugars, beat to combine.
- Add eggs one at a time, add vanilla.
- Stir in flour mixture until just combined.
- Add chocolate chips, oats, coconut and pecans.
- For each cookie drop 1/4 cup dough onto ungreased baking sheet (I use a large ice cream scoop).

- With an electric mixer, whip up the margarine and sugar in a large mixing bowl until fluffy. Add the eggs, vanilla and salt and beat well.
- Blend the baking soda and baking powder into the flour, either directly in the measuring cup or in a large bowl, and then tap this mixture into the creamed ingredients, mixing slowly. Using a sturdy spoon, mix the rest by hand.
- Add oats and stir until the dough comes together. Stir in chocolate chips, coconut and nuts.
- Line a cookie sheet with baking parchment and scoop the dough with a 2-ounce ice cream scoop. Press the top of the cookie dough mound down slightly.
