LAMB LOIN WITH POMEGRANATE GLAZE AND POMEGRANATE PISTACHIO RELISH
Steps:
- For the lamb: Whisk together the pomegranate molasses, mustard, horseradish if using and some salt and pepper in a medium bowl. Let sit for at least 30 minutes to allow the flavors to meld.
- Remove the lamb from the refrigerator 30 minutes before cooking.
- When ready to cook, heat a cast-iron pan until smoking hot over medium-high heat. Brush the lamb with oil and season liberally with salt and pepper.
- Sear the lamb on all sides and cook to medium-rare (135 degrees F on an instant-read thermometer), 8 to 10 minutes. Right before removing the lamb from the heat, brush all over with some of the glaze and allow it to caramelize slightly. Remove the lamb to a cutting board and let rest 5 minutes.
- For the relish: Combine the pomegranate seeds, parsley, pistachios, onion, vinegar and honey in a medium bowl; season with salt and pepper.
- Slice the lamb into medallions, drizzle with more of the glaze and spoon the relish over.

- For Mustard-Molasses Glaze: Mix together until combined.
- For the lamb chops: Preheat the grill to medium heat. Brush each lamb chop on both sides with olive oil and season with salt and pepper to taste. Cook the chops on one side for 3 to 4 minutes, or until golden brown. Turn over and cook for 6 to 7 minutes for medium-rare doneness. During the last 2 minutes of cooking, brush the chops with the glaze on both sides.
LAMB LOIN WITH SPICY DATE GLAZE
Steps:
- Heat the oil in a medium saucepan over medium heat. Add the onions and cook until lightly golden brown. Add the garlic and cook for 30 seconds. Add the chicken broth, 3/4 cup water, the ketchup, vinegar, ginger, cayenne, dates, cloves, cinnamon stick and honey to taste and cook until the dates are very soft and the mixture has reduced slightly.
- Transfer to a blender and blend until smooth. Add the chopped cilantro and salt and pepper to taste and pulse to incorporate. Transfer to a bowl and let cool. Remove 1/4 cup for garnish.
- Heat a charcoal or gas grill to medium-high for direct grilling.
- Brush the lamb with oil on both sides and sprinkle with salt and pepper. Grill, brushing with the glaze and turning once or twice, until cooked to medium-rare, about 10 minutes total. Remove and let rest before slicing.
- Place the lamb slices on a platter, drizzle with the reserved glaze and garnish with cilantro leaves.
MOROCCAN GRILLED LAMB CHOPS
Steps:
- Place the garlic, mint, turmeric, coriander, cumin, lemon zest, and 2 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade and process until finely ground. Add the olive oil and pulse to combine.
- Place the chops in one or two non-metal dishes large enough to hold them in one layer. Spread the garlic and herb mixture evenly on both sides. In a small bowl, whisk together the yogurt, Sriracha, and lemon juice, and spread it evenly on the lamb chops. Cover, refrigerate, and allow to marinate for 6 to 24 hours.
- Prepare a charcoal grill with hot coals and oil the cooking grate. Sprinkle the lamb with salt and grill 5 to 6 inches above the coals, first with the yogurt side up (marinade and all) for 4 to 5 minutes, then turn and grill for 3 to 4 minutes, until medium rare. Transfer to a clean plate, cover the plate tightly with aluminum foil, and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the couscous.
- Heat the oil and butter in a large saucepan over medium heat. Add the onion and cook over medium-low heat for 6 to 8 minutes, stirring occasionally, until tender but not browned. Add the stock and bring to a boil. Stir in the couscous, 1 teaspoon salt, and 1/2 teaspoon pepper and remove from the heat. Cover the pot tightly and allow the couscous to steam for 10 minutes. Fluff the couscous with a fork and stir in the mint and pine nuts. Taste for seasonings and add about 1 teaspoon salt, depending on the saltiness of the stock, and 1/2 teaspoon pepper. Serve hot.

- In a medium bowl, mix brown sugar, ginger, tarragon, cinnamon, pepper, garlic powder, and salt. Rub lamb chops with the seasonings, and place on a plate. Cover, and refrigerate for 1 hour.

LAMB CHOPS WITH MUSTARD-MOLASSES GLAZE
DH and I made these lamb chops from my Bobby Flay "Boy Meets Grill" cookbook. We liked how fast and easy they were, requiring minimal prep. We used lamb loin chops. DH said next time we will use rib chops as he didn't think the loin chops needed all of the dressing up, though he agreed the glaze was very nice.

- For the glaze: In a small bowl, mix all of the glaze ingredients together until combined.
- For the lamb chops: Preheat a gas or charcoal grill to medium.

LAMB LOIN CHOPS WITH MOLASSES TARRAGON GLAZE

- Sprinkle chops with salt and pepper. Combine molasses, Dijon mustard, cider vinegar, garlic, white pepper, and tarragon. Put chops in a large container or bowl, cover with glaze and gently toss to coat them completely. Cover tightly and put in refrigerator to marinate 1 hour, or more if you have the time. You can actually marinate them up to 24 hours. When ready to cook, heat broiler on high. Line broiling pan with tinfoil and put in chops. Spoon some of remaining glaze over them, so they're all nicely covered (reserving a little). Cook about 4 minutes until crispy, remove from oven, turn chops and spoon more glaze over them. Return to oven and broil about 4 or 5 more minutes for medium rare, longer if you like them more well done. Test by cutting a small slit in the center of one of the chops to look for pinkness. Chops keep cooking once removed from oven, so it's better they be a hair underdone than over. Serve with salad, Tarragon Roast Potatoes, or Wild Rice Pilaf with Cherries, Zucchini, and Carrots, and a light dessert. Variation For a spicier chop, omit tarragon and white pepper and add 1 tsp. ground chili pepper (chipotle, ancho, cayenne, etc.).
