LAVENDER MAYONNAISE FOR ELEGANT SALADS, FISH AND CHICKEN
This is a fabulous recipe, or rather a recipe idea. I use this lavender mayonnaise throughout the summer months; it marries so well with poached salmon and is wonderful when served with canapés, salads, cold roast chicken and most types of fish and seafood. It is easy; simply add a drop or two of lavender infused vinegar to homemade or good quality readymade mayonnaise for a floral fantasy at your dinner table! By all means add a few lavender buds when serving this, as a garnish, it adds to the whole dining experience. I have a recipe for lavender vinegar: Recipe #416577

- Strip all flowers from the stems. Place in a bowl and add the orange zest, garlic, honey and salt, to taste. Combine well. Add the olive oil and herbs and mix.
- Spread mixture over chosen meat. If the fish or chicken is very thick, make regular slashes and massage marinade into these. Leave to marinate for minimum of 20 minutes before grilling (broiling) or baking, as desired.
GRILLED CHICKEN SALAD WITH LAVENDER & FRESH HERB MARINADE

- To make the marinade, strip the lavender flowers from the stems and combine with the orange rind, garlic, honey and salt; add the olive oil and herbs.
- Slash the chicken deeply, spread the mixture over the chicken and marinate in the refrigerator 20 minutes.
- To cook the polenta - in a heavy saucepan, bring the chicken stock to a boil; add the polenta in a steady stream, stirring all the time until thick; this will take 2 to 3 minutes.
- Turn the cooked polenta out onto a 1 inch deep buttered tray and allow to cool.
- Heat the broiler to medium. (If using a barbecue, let the embers settle to a steady glow) Grill the chicken about 15 minutes, turning once.
- Cut the polenta into 1 inch cubes with a wet knife.
- Heat the butter in a large frying pan and fry the polenta until golden brown.
- Wash the salad leaves and spin dry, divide among 4 large plates.
- Slice each chicken breast and lay over the salad. Place the polenta among the salad, garnish with sprigs of lavender and tomatoes, season to taste and serve.

- In a small bowl, combine salad dressing and 1/2 cup mayonnaise. Pour 3/4 cup into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 30 minutes. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 170°, basting frequently with reserved marinade. , Top each piece of chicken with a slice of ham and cheese. Grill, covered, 1-2 minutes longer or until cheese is melted., In a small bowl, combine the mustard, honey and remaining mayonnaise. Serve with chicken.

ELEGANT BRUNCH CHICKEN SALAD
I made this for a baby shower and was bombarded with requests for the recipe! It is delicious on its own, or with small bread slices or crackers. Don't skimp by not using the homemade mayonnaise, it really adds a special flavor! Makes a 2-quart serving dish full, so if there will be other foods, this will serve at least six, maybe even up to ten!

- Bring a large pot of water to a boil. Add the chicken and simmer until cooked through, approximately 10 minutes. Drain, cool and cut into cubes.
- While boiling chicken, make the mayonnaise: Using a blender or hand-held electric mixer, beat the egg, mustard, salt, water and vinegar until light and frothy. Add the oil a tablespoon at a time, beating thoroughly after each addition. Once mixture begins to thicken, you can add oil more quickly. Continue until mixture reaches the consistency of creamy mayonnaise. NOTE: The more oil you add, the thicker it gets; you may not need the full cup of oil.
- In a large bowl, toss together the chicken, grapes, pecans, blue cheese and 1 cup of the mayonnaise. Stir until evenly coated, adding more mayonnaise if necessary. Refrigerate until serving.
